"How do you like your Beef?", "Cut the horns off and wipe its bum". I once overheard a Chef trying to dissuade a diner from having his Venison Steak well done almost pleading with him to no avail. It looks wonderful but I like it a little rosier too. I am going to Slow cook my whole Chicken this Chritmas dinner. Going to look in your Back Catalogue or a version of Jamie Olivers one in Milk.

I could almost smell the roast cooking. Looks scrumptious. I would have to make one adjustment, and that is to find a substitute for the wine. I loved the little trip that you took us on at the end of the video. Thanks for sharing!

Instead of wine, perhaps a lesser amount of a nicely flavored vinegar, or a dry apple cider.

It's not as "leave it to cook" as a slow cooker, but I can see making this in a Dutch oven. That way, you get the fond from browning the beef adding color and flavor to the gravy.
@susancarr99553 жыл бұрын
Next time, use your stock to deglaze the pan you seared the beef in and then add it to the crock. That way you don't lose all those wonderfully flavored bits of goodness. Cheers!

about two weeks ago I made some soup whilst shaking some ground pepper into it the lid came off a nice big mountain of black pepper, yesterday I was soaking some butter beans and broth mix to make a pot of soup (it is freezing in London) the broth mix packet split and there was lentils and other pulses all over the place I even had to vacuum my feet, today I have a bowl of soup and I used a pepper mill and as I was grinding the the pepper into my soup the top breaks of and there were pepper seeds every where, cooking is stressful
@nancylindsay42553 жыл бұрын
LOL I did that once with chili pepper while making guacamole. I thought there was a shaker top on the jar, so I gave it a good shake and emptied the entire jar into the mixture. But you have quite a history with this! Thanks for sharing so we could have a good laugh. I guess if spilling stuff causes our greatest stress, we're doing pretty well.

@@carolgibson2145 true. Cutting against the grain makes it more tender when eating. It's not criticism, it's education.

Can I make a recommendation. if you look at your meat it looks like it is going to be stringy. I was taught that meat is the same as wood and has the grain running one way. If you cut against the grain your meat will be less stringy and more digestible. Please don’t take this as a criticism. I really enjoy your shows. I hope this advise is of some help to you. Take care and be safe.
