Hello folks!
Well it’s that time of the year again where I whip up a dessert or two! This is a nice twist on a traditional cheesecake…more of a trifle really :) If you like the combination of chocolate and Baileys Irish Cream, then you’ll really enjoy this. I’ve made individual desserts, but you could use one bigger bowl if you wanted.
Everything I used will be listed below,

What I used - Makes 3-4 desserts (depending on serving size)
For the base-
15 Oreos, bashed into crumbs
3 Tablespoons of unsalted butter, melted
For the Baileys Chocolate Cheesecake Filling -
452g (16 oz) Cream cheese, room temperature
100g (1/2 cup) White sugar
3 Tablespoons (18g) Cocoa powder
4 Tablespoons (60ml) Baileys Irish Cream
1 Teaspoon vanilla extract
For the Baileys whipped cream -
300ml (1 1/4 cups) Double or heavy whipping cream, cold
3 Tablespoons (45ml) Baileys Irish Cream
2 Tablespoons (12g) Cocoa powder
3 Tablespoons (22g) Icing sugar or powdered sugar
1/2 Teaspoon vanilla extract

This is fabulous, thank you! A Bailey's flavored coffee creamer should work a treat as a substitute. I've done that as a non-alcoholic alternative for a whipped dessert like this.

Good evening Cheryl - I’m really looking forward to this one. I look forward to all your recipes but this sounds and looks absolutely delicious - a friend of mine suggested pouring some Baileys over vanilla ice cream and topping it with crushed Maltesers. I’m really tempted to give it a go but I have to be a bit careful in here with the alcohol especially with all my medications, but I’m sure a little bit won’t hurt- have a great rest of the week and I look forward to your next recipe. We can get non alcoholic Baileys in Canada for coffee, and they offer it in coffee shops too at Christmas , I prefer the real stuff myself !! But this substitute is ok . Happy Christmas 🎅🏻

They look so nice cheryl, very professional but very easy. Unfortunately im not a big fan of baileys as in drinking it ( dont do creamy alcoholic drinks) but might like it in a dessert. My husband loves baileys tho so think am.going to give these a go oog made 1 of your old slow cooker recipes for tea lsst niggt , the chicken korma, delicious.

Sounds fab, Cheryl! Id likely use Kalua, since Ive some on hand...and this time of year, Godiva makes nips of Chocolate, whie Chocolate, and dark chocolate liqueurs that might work well. If I don't get my Christmas cake which should have been my birthday cake but they didn't have it when I went in, I might make these for Christmas since I can just make a couple and not have leftovers. And for anyone who can't afford Baileys then Aldis has a cheaper version and it tastes the same. Also Baileys is now making other flavors like strawberry over Xmas so if U want to make this dessert and U ask you husband to go buy some Baileys then make sure he buys the ORIGINAL Baileys and NOT the strawberry, pineapple ( or what other weird flavors they have).
