No, the actors in Alien (1979) did absolutely know that the alien was going to burst out of his chest. Do you think they could hide all the mechanical effects and that there was a giant mechanism under the table and the body was fake? They surmised also that it would be bloody because the crew was covering themselves and off-screen equipment with plastic drapes. Many weren't expecting just HOW MUCH blood was going to spray and how violent ON THE FIRST TAKE. Subsequent takes they did know.
