what is the shortcut to just add the towers onto each other without dragging?

Right click on a tower that is on the field: if there's a copy in the shop and you've enable the setting (at least, you had to when I did it), it will stack it as though you had done the click-and-drag method. Just be careful, it will go left to right. If you froze a tower and there are more than one, click and drag the ones you didn't use the token on.
