When do we retire horses

Question: When is the right time to start riding horses after they arrive to a new place? (Like if a horse comes to the ranch, how long until it is perfect to ride a horse)

I always try to wait at least a week before riding them once they come to a new place. Sometimes longer. It all depends on how well the horse is settling in. If they are doing well I might do some light riding or ground work sooner though
