Throwing in those dominant-7 chords, where maj7 or straight major chords would be more conventional, was a real curveball. Those weren't in the original and they force the song out of its diatonic key and into a way different, blues tonality. Unexpected, and cool-sounding! And I agree with Kelly, the singer just went with it flawlessly.
