11:00 To answer your question, I do believe streetfood stalls are more enjoyable when eaten outside. There might be circumstances where you’d be forced to bring it back home especially when it rains and you’re still craving it. But eating it outside with your friends, soaking up the culture (with sweat) really makes it very special. 😂😂😂 It’s very authentic that way. Plus, the sauce that the streetfood stalls have are legendary compared to the restaurant sauces. There’s just something about the street version despite all the air pollution around that makes it more tasty. HAHAHAHAHAHA! I LOVE YOU JESS, BTW. ❤❤❤ I’m your long-term fan.

Really love watching this series as it’s one of my favorites you’ve done (aside the trabaho series) From watching many of your episodes I can sense it’s hard to approach people at times. With so many cameras and especially the lighting equipment will tend to scare everyone away to be approached since it can be a bit intimidating. Maybe take the lightning away and just shoot with low aperture lenses will make it much less tense for people.

Don't know if you'll see this, but as someone who've experienced aggressive solicitation attempts alone and with a group. Here are some things to remember: 1. DON'T PANIC. If you panic, never show it. If they notice you're affected by the aggression, they'll think you'll eventually give in so they won't stop until you do. 2. REJECT POLITELY. Keep a straight face and apologetically saying "wala po pasensya na" works sometimes. 3. DON'T TALK BACK. Sometimes, being rude to them will make them want to outdo your rudeness. Believe me HAHAHA 4. GIVE IF YOU ARE ABLE. It's the fastest way out. Any amount works, but don't count your money out in the open to be sure 😂

One of the restaurants that you visited had a tragic incident in its history. It was once a disco place where the generation of my father used to go. A group of graduating students went there to celebrate their graduation. A massive fire started, and everyone rushed to get out. Unfortunately, the door could only be pulled and not pushed. Since everyone was rushing to leave, they were unable to open it, and everyone became trapped and couldn't escape. Clue: It resembles the place where you celebrated your birthday party.

My personal Tomas Morato/Timog area faves: Frazzled Cook (menu is so vast but chicken cordon bleu, sisig and their pastas are my fave), Tadeo (Mexican-Filipino fusion--just amazing, you won't regret it!) and Pamana (Filipino with a Hawaiian BBQ sister restaurant so you can also order offerings from next door). So many other places we frequent here as a QC local but those 3 would be my ultimate faves.

Of course, there is nothing wrong with experimenting with traditional recipes naman talaga, but I think it is important to do so while still respecting the original dish. Ultimately, the decision of whether or not to reinvent traditional recipes is up to the individual. However, I believe that it is important to be aware of the potential consequences of doing so. By preserving traditional recipes, we can ensure that these dishes are not lost to time.

I have already experienced being asked for a donation, and I have become immune to it. When someone hands me an envelope, I simply ignore it and walk away quickly. TLDR: People asking you for donations might be a scam. They claim it's for a "community" but it's in fact for their own personal gain. When I was still at my previous work, some members of the LGBT would also ask me for "donations" for some "pageant" and it seemed like they're asking me every month. At first, I would give them between P20 - P50, but half a year later, I stopped giving them anything. I've realized, these people are only fooling me. Im maybe a stranger and not know much about that place but using my common sense alone, I've thought no pageant happens every month.

Tomas Morato reminds me of the good times when I was a teen. We used to party there a lot, there's a club there called decades, we party and drink then afterwards we will walk on the streets will stop at the barrackz, it is a beer place and you washed all the hard liquor you had from partying and then there's a restaurant there called kalye Juan, they have silog meals and coffee, it's hang over cure. 😊 Really missed those times.

You should walk south ward from the rotunda along T. Morato. Restos abound in that area. Don’t stay too long near the rotunda, beggars and street dwellers converge there. Schedule one again on a Saturday. Good luck.

Inasal is just literally Ilonggo for "grilled" or "roasted over coals", especially those which use skewers, which is "Inihaw" in Tagalog, "Sinugba" in Cebuano, and "Filipino barbecue" in English. So technically anything grilled is Inasal (including lechon baboy, lechon manok, etc.). But yes, I guess proper Inasal/Inihaw/Sinugba differs from western barbecue in the sauce/marinade. Filipino barbecues of course, use more local ingredients - calamansi, vinegar, soy sauce, lemongrass, black pepper, achuete, sugar, banana ketchup, and sometimes labuyo chili.

Filipino food is called the "original fusion" food because it always evolves through the years, they always tweak the ingredients to make it appeal on current generation. But I must admit some dish we should leave as is because it is losing its authenticity when we alter too much from the traditional origin.

@3:27: "Inasal" originated in Bacolod where you spent your childhood. Meaning Chargrilled or roasted meat in a stick. BBQ chicken is a modern alternative to pork BBQ I think.

❤ Goto Tendon is my favorite too. Im quite surprised you didn’t like it. I would have recommended their Pork Adobo. Their Niyebe (snow) desserts aren’t meant to be mixed as, like you said, the ice is already flavoured. Again, I would recommend the Ube Salted Egg Niyebe.

The reason why you need to mix anything with shaved ice in the Philippines is that the mixing incorporates the flavor of the other entities in that dessert. Sometimes I don't like it when Jessica compares food from the Philippines to Korean ones since both cuisines are so different. Just my observation in this episode. Also in the Philippines food was not prepared to entice your eyes, most of the time the weirdest looking ones have more flavor and taste to offer than the aesthetic food we enjoy in expensive restaurants.

Why wouldn't she compare it to Korean food? She's Korean and it's her point of reference. I think it's great to hear about the differences. She's never derogatory or negative, but factual and informative. The Filipino palette is an interesting mix of oriental and western taste so it's always nice to hear comparisons. Especially when it's done in a positive way. Jessica is also in a unique position to compare, because she grew up here but in a Korean household. I think that's the perfect spot to offer good comparisons on two different cuisines. Anyway, I think it's impossible to expect someone to NOT compare food they're eating to something they're familiar with. If it bothers you so much, then than just means they're not the right person for you to watch.

Yes, but there's a difference between mixing, and turning it into an unappetizing slush. I'm Filipino but I've NEVER turned halo-halo into a purple-brown shake, for example. It's supposed to be only mixed LIGHTLY. The reason so many people are turning it into sludge is because of the misconception that since it's name means "mixed", it should be mixed thoroughly. There's an easy way to tell how much to mix: the ice should NOT melt while mixing it.
