As a big fan of Lynch, I gotta say I LOVED that his character is introduced with the "You wanna met the best film director in the world?", and then he walks in :) Even if they're talking about John Ford, I love how the whole moment feels with him being announced like that hahahah

One of the leading examples, but John Landis often has dozens of directors appearing in his movies, Into the Night and Spies Like Us (both 1985) got to be the leaders. Look up the casts, it's crazy.

I saw Close Encounters as a little kid, and didn't realize the French guy was a renowned film director until he died years later. There were various tributes to him, each of them mentioning such projects as 400 Blows and Day For Night. And my pea-sized brain went, "Hey, it's Lacombe!"
