Thanks so much for filming and posting this video. After researching I do believe this is the best system and safest as well. I am going to purchase a dedicated refrigerator as well. Awesome video! I have been experimenting with fermenting vegetables (I've made a few batches of sauerkraut and kimchi) and I have a question: If I want to just ferment, say, carrots or peppers, should I just pour some brine over them in an airlock jar and let them go for a week? Thanks!

I have watched hundreds of videos and talked to nutritionist and ALL say to REMOVE airlock ONCE you refrigerate, as refrigeration STOPS the fermentation. Plus, switch out lids to the plastic lid.

This is my first time making kraut and I thought I was to leave it set at room temp to ferment. Should it be in the refrigerator?

The two things that will stop fermentation is temperature and pressure. So putting it in a refrigerator will stop fermentation. If there is any left, the small amount of built up pressure will stop it. Keeping that airlock in place is a terrible idea. This video is made so you buy more product.

13 weeks? What? No... no. Leave it at room temp and it will ferment in about 2 weeks. When its done...take the airlock off and you may put in the refrigerator. And why didn't you put weights in that saurkraute? Don't ferment it IN the fridge.
