Irish stew:
Beef (can be replaced with lamb) - 0.5 kg
Onion - 1 piece
Carrots-1-2 pieces
Celery - 1 piece
Potatoes - 2 pieces
Garlic - 3 cloves
Irish dark beer-0.5 liters
Salt, rosemary (0.5 sprigs), thyme (2 pieces), black pepper.
Cut the meat into large cubes, fry for 5-7 minutes on high heat in vegetable oil until golden brown. We transfer it to a baking container (you can do it all in a regular pot/frying pan).
In the same pan, fry the coarsely chopped onion, garlic, carrot, celery (cut it thinner) until soft (5-10 minutes). We transfer the prepared vegetables to a container with meat, add coarsely chopped potatoes, salt, pepper, thyme and rosemary. We pour dark Irish beer (you can try other dark beer, but then I can't guarantee the taste). Close the container with a lid and send it to the oven for 1.5 hours at 200-220 degrees, stirring every 20-30min. If you cook without a lid, the cooking time will be reduced.
After 1.5 hours, you can open the lid and simmer until the desired consistency) This fragrance that pours out of the oven into the kitchen, into the hallway, to the neighbors... He's just amazing) I rarely write this, but it really is. it goes well with whiskey and dark beer)

Kefir - 1 cup

Butter - 100 grams
