While it is only 60% accurate still, the sleep really didn't matter. Since Groundon died the next turn if Tempt didn't put them to sleep he would have just killed them. The Z-hypnosis was probably just used for the speed boost and since the pokemon was never hit after that even in the 40% chance the hypnosis missed, unless Groundon could OHKO it wouldn't have changed things, and if Groundon *could* OHKO they would have to get through Darkrai with either their Mewtwo or ground Arceus as the Ratatata would take out one of them and Groundon was going down in one hit to Darkrai. Even if the other guy got to trade Mewtwo for the Ratatata I'm not sure the Arceus would win 1 v 1 against Darkrai

Priority moves like extreme speed can still go second if the opponent's mon ALSO uses and has higher speed. But more specifically, choice items don't have an effect on dynamax pokemone. You can see in the second fight how ditto could use max quake even tho it's choiced in extremespeed. It loses both the speed boost and the lock into one move effect

5:26 This is what "competitive" Pokemon has really come to, people don't think prediction is even possible so you must be cheating. I haven't even played for going on 2 years and I'm still able to predict this guy. Though this current group of players is also the group that was okay with a committee vote removing Manaphy within the first week of BDSP wifi battles. And also put up with a committee vote for banning a lot of items that really had no major impact on the game, but did make for some fun teams/builds. I've also gotten into arguments with current players about prediction as a whole, where most these days seem to think it's a worthless skill to have, and that basically you should always just do what will do the most damage, ignoring what your opponent might do should you do that action. Like swapping into Gengar on the Rattata is the obvious play, so rather than doing that, this guy should have just gone for the attack, get some damage then Dynamax to finish off the Ditto, assuming Temp didn't swap out after being out predicted. Pokemon battles are a battle of positioning and momentum. You always want to be trying to get into the best position and maintain your own momentum to keep your opponent on their heels. Even if that means risking losing a Pokemon or outright sacrificing one to get the momentum/position back into your favor.
