Made this last night, and it was very good. A little less perfectly golden brown, and a little raggedy around the edges, but otherwise just like the video. I did also add about maybe 75 grams of diced ham in the cheese layer. Going to have the leftovers for breakfast now.

If there are any superfood, egg is definitely on top of the list. Egg is packed with tons of vitamins, good cholesterol, protein, antioxidants, etc.. While potatoes are definitely some of the most nutritious vegetables, eggs are still superior and considering the amount of eggs you said they eat, they are getting more than enough vitamins.
