When we think of Africa, we all have certain images in our minds: Hunger, thirst, drought and poverty... Unfortunately, Africa has been described to us through these pictures for centuries. While we accept this, we set out to show that the continent is not just about these images. There are inspirations we can take from Africa's cultural richness. We want to express these inspirations in the kitchen through similar flavors. And we say let's go, “Twende”.
Our presenter, Chef Kevser Çelikel, has been spending certain periods of the year in Zanzibar since 2018 to serve “voluntarily” in her profession. While living on this island, which she now calls her village, she discovered the similarities between our dishes. In this episode, we will cook fried dough, which we call “pişi” and they call “mandazi”. You will be surprised by the connection between Zanzibar and the Ottoman sultanates as much as the similar dishes we cook.
