As a Turk I like my mans objective approach. Shwarma is a mix of cultures; It's cooking method for the meat and bread is from Turkish origin but the rest is a beautiful blend of Mediterranean, Turkish and Arabic as where and when it was invented was a threshold of cultures originated in the Levant region during the Ottoman Empire.

I love his honesty. Actively addresses that the origin is debatable and that there are only a couple requirements for it to be what it is said to be. He isn't saying it's "traditional" as the original/correct way to make it. He is saying it is "traditional" as in the way his family would make it in their home country. Shawarma means to turn, a loan translation from what it was inspired from, namely Doner, which also means to turn in Turkish. It has its roots in the Ottoman Empire. First through Cag Kebab, invented in Erzurum then a part of the Ottoman Empire. Cag Kebab was horizontally stacked and usually made with lamb or mutton. Then, it inspired the invention of Doner, which became vertically stacked and usually made with Beef. Then Doner inspired many variations such as the Greek Gyro and Shawarma, though those are often made with Chicken as was common in poorer Neighborhoods where beef was not affordable. It is unclear whether the chicken version was invented in the Ottoman Empire but it was common to see there too.

It seems the origin is the Turkish döner. I remember reading (tried to find a source but couldn’t) that some middle easterners tried to make döner after learning about it and made their version that is called shawarma. Usually using a taboon bread (a sort of flat bread from the levant) and we put hummus, spicy spread that idk it’s name, tomato and cucumber salad, cabbage salad and other salads (all by the choice of whoever eats it) we choose the meat. It can be chicken, turkey, and many places also have mutton. Then we can put tahini. Usually we serve it alongside fries and other salads like eggplants, cabbage, onions, pickles and more. And yes, ketchup is ONLY for the fries 🤣

Shawarma & Dürüm are basically identical but with different ingredients & a lahmacun is thin, mostly crunchy when it’s hot flatbread with a ground meat/tomato/chili sauce with different herbs etc. on it.
