I've been watching your videos these past few days. 👍 Best experience was in 2008 in Northern Leyte when my Aunt celebrated her birthday. The pig they cooked was a Native species (black, wild boar looking;thin and long body, not much fat). Took long to cook and they spread milk all over the lechon at every turn of the spit. That may answer how they make the skin so crispy. Very laborious. I wasn't impressed at first glance, but I tell you both, i've returned to the table five times !!!! It was the crispiest, juiciest, flavorful, lean inasal I have ever tasted !!!! In Cebu and the Visayas, they prefer to cook Native pigs. These are free roaming and in most cases never fed with farm feeds. Hence healthier and tastier. 😉👍

In my opinion, the difference is not in the way of preparation or the spices used. They are equally good. The difference is the pig itself. Lean and younger makes for a better tasting lechon. Have you tried suckling pig lechon? That, in my opinion, is the best.

I think a stable the cooking temperature is important too to get the best lechon. I did one by the beach in 2014, hired two young guys to mind the lechon, but the day at the beach was so blowy. The outcome was, the lechon was cooked, but the crispness of the skin wasn't that great. I agree a younger pig will make good lechon.

Oh yeah, windy conditions will ruin the cooking process. It will either blow the fire away from the pig or blow it too close. Making it partly overcooked and partly undercooked.

For me, all lechons in Cebu are quite tasty and they differ very slightly and Carcar lechon gets my 5 stars. Both Rico's and Zubochon get 4.9 stars, House of Lechon, CnT and Ayer's get 4.8 stars.

cebu is the new lechon capital. but originally laloma qc is the 1st one and real lechon capital that lechon was known for it's mang tomas sauce stores like milas lechon and lydia's lechon is really good! I should try lechon de cebu from carcar and cnt when i go back to the philippines. anyway the best time to eat lechon is when it's fresh. thanks for this video! hope you enjoy the beautiful philippines!😘

All lechon in cebu is the best no need Mang Thomas. You can use Vinegar with chilly are enough unlike manila you can use mang thomas for you can take the taste. I heard before at CNT they have order 20 lechon sometimes 30 are going to Manila

You don’t want your lechon to taste like candy. Mang Tomas is sugar and liver. Best lechon is in Cebu and they also make spicy one. Dip the crunchy pig skin in vinegar, calamansi and chili peeper then you have the best lechon in the country.

Cebu's lechon has been around since the Spanish era. When I was working in Manila in 1980s, my officemates and I would usually order lechon from Cebu through our field office. According to PAL cargo employees, many companies in Manila were also doing it during Christmas and other special occasions. The demand for Cebu's lechon is the reason why many lechon companies in Manila are adding "Lechon Cebu" to their names.

you guys should taste the roasted calf. besides lechon when we have parties or family gathering lechon & roasted calf are in the menu’s. have you also tried the sizzling pochero in cebu? it’s a must try as well as our famous dried fish called danggit as well as the dried squid. for sure you won’t like the smell but i assure you it is so good. we normally eat it at breakfast.

For me, the best lechon is prepared simply with lots of lemongrass, whole spring green onions, bay leaves, garlic & just enough salt. Then roasted slowly over wood charcoal, however, the best is coconut shell charcoal. I prefer to eat lechon with simple native venigar with crush raw garlic as a dipper sauce. The best part of lechon, for me, are the ribs & of course the crispy skin. Ah, now, my mouth is watering.

It's a roasted pork...I think lechon is more of a term for how the meat is being cooked. And as Anthony Bourdain puts it, it's the best roasted pork he ever tasted.

Hungary also have this form of Lechon, on a different name, I had it in Budapest. Roasted piggy has gone trendy in UK too. I think this is way ancient form of cooking the catch, mostly forgotten, yet Filipinos carried on and turn it into a delicacy.

Great video. You guys are living a great life. I grew up in the USA but I'm Filipino. I went there for vacation in 1987 when I was 18 and was treated like a long lost Prince so I asked my grandparents if I could live with them (i actually lived and was raised by them in the USA when my grandfather worked at the World Bank in Washington DC but they retired in Manila so I also missed them as well.) Watching your video my mouth was watering imagining the taste. I live in Oregon, USA and my wife is an American, and Oregon has only a small population of Filipinos and any Lechon would be a treat for me. My favorite dishes are Peking Duck (Chinese) and Lechon.

heheheheyou guys are funny for just lechon you go all these trouble just to find the best lechon in the Philippines. Lechon is very good defend on how they prepare & cook the lechon. Yes its true, they said, Cebu has the best lechon. But Iloilo calim there lechon is the best too hehehehe...... Do not trust to eat in a restaurant that do not really specialized lechon, if not make sure to tell them to also serve you the skin part. Enjoy, take care & stay safe.

Finally you must try Lechon Paksiw...the best ever leftover lechon stewed in a delicious savoury sauce, best partnered with steamed white rice. The skin is no longer crispy but in contrast is super soft and delicious when stewed in the special sauce.Try it!

if you are in metro manila you should go to LALOMA QC if you are looking for lechon, it might not be the best but there are tons of famous lechon seller from MILAS to LYDIAS to PINGPING etc and even display them in the street, a lot of option there

hi guys i'm glad that you guys are trying every defferent letchon in the philippines but when it come's down to it, there's no wrong or right to cook letchon, pilipino's have they're ways of cooking theire letchon... it's all about preference on how your liking , just like chicken adobo, we cooked our chicken adobo to many different ways.

choice litson is the suckling pig not so young not so old. tender and juicy. spices were added inside the pig stomach to enhance the taste (it varies) and the different ways basting the skin while roasting to make it as crispy as possible.

The tastiest part of the Lechon is the belly. Every time I see you guys eat lechon my mouth waters. Damn that look so good. I hate dieting. God, help me. Can't wait for this sunday to buy lechon. I am fasting right now and only Sunday I can let go and eat what I want.

Whoa! 😳 You guys went deep and legit with this. I think Zubuchon is still the best one but... it's best to eat from the original source which is Cebu. I haven't had the luxury to eat there. You lucky guys! 😏

Ur right about the preferences....and there are many more great tasting lechon like the ones from Cagayan De Oro (Iligan City) where lechon is eaten as it is w/o need for sauces or soy sauce or vinegar... Happy eating!!!

Good to see you enjoy Lechon around Cebu City, we have the same verdict. Zubuchon really wins for me since they have enhanced and improved the flavor of their lechon by incorporating different herbs and spices which are not in the traditional lechon you have tasted in Carcar. But still sometimes, I still miss the original taste that the lechon in Carcar gives. I can officially say that you are now experts in lechon since only few tourists experience having a tour and taste test of the different lechon here in Cebu. Continue to explore the Philippines especially in Cebu, Keep safe and have fun!

It also depends which part of the pig they take the meat from, if its from the belly, its going to be juicy and full of flavor, if its from one of the limbs it migh be a bit dry and not as flavorful since the flavor also comes from the stuffing (spring onion, lemon grass, garlic, salt and/or soy sauce), which they stuff inside the belly cavity and not the limbs.

you two deserved to try the lechon in mindanao ozamis. not only delicious, but look beautiful.. if you try you see the different .. he is a pro ... the price and the place is so cheap... the owner is the one who cook for the costumer.. maybe I call it a Native lechoner..!!

I'm a Filipino but have yet to taste all the best Lechon from Cebu coz I'm from Manila -- only tried Zebuchon so far since they recently opened in Manila. Will try Rico's next. You guys made me hungry! Haha

I am a Filipino and have had both Rico's and Zubuchon. I definitely, 100% agree that Zubuchon is the best. Rico's holds more of a nostalgia effect to more people since it's found in the province and Cebuanos are proud of their homegrown stuff. But being objective, taking into account the taste, crispiness and juiciness, Zubuchon is at the top.
