I have been to about 40 cpuntries, but it would be difficult to pick 1. I would probably say my top 3 would be Italy, Croatia, and Indonesia ( beautiful tropical islands, interesting cultures and nature). Other interesting places maybe East Africa and Nepal but travel there was a bit rough even though both were probably once in a lifetime trips for me.
