Buffalo native here, my dad owned a bar in Riverside years ago and I helped in the kitchen. Wings always naked, double fried til crispy then shake with a sauce made with Franks and butter. Simple is best. Celery and blue cheese dressing. I myself now use utter and Tabasco for sauce.

for the average home cook, I think Kenji's or Brian L's oven baked wings are ideal. No deep frying, same great wing crispy with a lot less of the hassle. Another banger of a video, Adam!

yeah, kenji's recipe gets the same level of crispiness as deep-frying...it's my go-to for wings anymore due to the level of ease/end product.

I've been cooking wings for over 40 years. My method is to buy fresh wings and section them, then dredge in corn starch. Freeze on trays, then bag until ready to cook. I freeze bc it gives you crispy wings without being overcooked. For sauce, I buzz a can of chipotle into a quart of Tapitio or Valentina hot sauce with ¼c of Old Bay. It just enough to add some depth of flavor without it tasting like Old Bay. I fry outside in a wok with a turkey fryer stove bc I want A LOT of btus while cooking. It takes 7-12 minutes depending on the size of the wings. Toss in the sauce but don't use too much. A dripping wing is not going to be a crispy wing. Usually about 2oz is enough per pound. Also, when frying cook the drumettes for 1-3 minutes before adding in the blades. The corn starch is just enough to add some crispiness without it being breaded. Flour will burn in the oil while corn starch will actually help clarify it. An alternative to corn starch is the Korean two step frying method.

People over complicate wings. They're simple bar food. No breading or brining, just deep fried wings and a simple Louisiana style hot sauce. Eat them fresh and hot.

All of that culinary shit is immediately rescinded when he tried to use ranch with Buffalo wings. If ranch even touches Buffalo wings, they are immediately just hot wings, because how Buffalo wings were first served was with blue cheese.

The only way that the boy from Rochester wouldn't win is if Adam tested them in Buffalo. As for s**cide sauce... you got that wrong too, Adam. Anchor Bar used to actually have that. They renamed it a long time ago, but it's way hotter than BWW's "Blazin" sauce.

They looked delicious, but can't get onboard with fried chicken being a buffalo wing. Honestly, can't even get onboard with breaded buffalo wings. Coming from the West coast, VERY rarely saw breaded buffalo wings until moving to the Midwest. Fry naked wings right and you don't need the unnecessary breading (personal opinion).

Babish is talented, but a long way from good. Franks red hot is over rated IMO, its like going with Titos Vodka, boring and tastes subpar. I guess I'm spoiled with a chef girlfriend and my tastebuds expect more. Like you said "Boring" It is personal choice which is fair and I respect that. I will agree to disagree sir. So i have made nicks drums legs before yet i personally dont considered them Buffalo wings style. I think they are more of a Buffalo wing inspired fried chicken. Overall they were still good.

Crazy that Nick seems to be so well educated yet worked with logan paul even after all the terrible things he's done. Pretty disgusted to see him do that and honestly its one of the reasons I ventured out to find channels like yours. I greatly hope he's not brought up again in future videos because if so I'm out. Babish aint a Chef. I've not even a chef and i've done a cert II and part of a cert III (which is why I don't considered myself a chef, but a cook yes). I have also spent years in and out of the kitchen before I become disabled.

I am not a fan of chicken wings, always prefer the thigh! (**ahem** chicken thigh) So there is lots here that everyone can take home for frying their own chicken parts. I really love the background music as it is so important to setting the mood. Outstanding cinematography, close ups and editing. I personally can't stand the taste of Blue Cheese. To me it taste like its gone bad. I prefer ranch obviously but I think either sauce is standard with wings. I'm pretty sure if you go to any place that serves wings they would have both condiments available.
