I didn't know Tony's wasn't a common thing until I was an adult. Growing up in a Cajun household, all of my family and friends had Tony's in the house. The only real debate was between Tabasco, Louisiana Hot Sauce, or Crystal. Now that I'm older, I've branched out to using Slap Ya Momma seasoning, and the extra hot Slap Ya Momma. Glad to see Tony getting the respect he deserves though, it's great for seasoning burgers.

Honestly, the carrot trick is best if you shred it in and sauté it with your onions and garlic. The searing of it makes it sweeter and that will transfer the best flavor into the sauce.
