to Dogen: tapioca is a starch (like corn starch or potato starch) that's made from the tuber (like a potato) of the cassava (a.k.a. yuca) plant.

@@Thelaretus it was originally brought by portuguese traders to africa and asia in the 1500s. putting tapioca balls in tea started in taiwan in the 1980s. the tapioca balls themselves were based on a similar, pre-existing dish called sago pearls, which gets its name from the palm tree whose pith is used to make the pearls. i understand that when tapioca pearls were introduced to brazil from taiwan, they were called sagu, after the original taiwanese dish, despite being made of the cassava that's native to south america.

@@Danny.._ I am from south Brazil where sagu is very popular dessert, it blowed my mind that name cames from Taiwan, since Sagu is made from cassava (we call it mandioca), a national turbecle.

Chris’ Japanese still has some British English accent. The Brits and the Aussies usually have a problem with the “vowel” sounds. It’s a little off, but pretty good.

What I find really interesting about this video is that Dogen, the American, is very subdued and quiet and Chris Broad, the Brit, is quite loud and confident. Growing up in the UK I would describe Chris as a fairly typical English guy (though perhaps a bit friendlier than most English people) but I also always had this image of Americans being loud, brash and confident whilst us Brits were all quiet, reserved and subdued. I guess the truth is that image was always a lie, people are people, there is no national character.

I know it may be pretty expensive, but I think it'd be real cool if you guys could show us some of the most interesting/aesthetic/unique onsens/ryokans around Japan--with the bonus in relaxing yourselves from the big biking trip. I was lucky enough to find one--Kameoka's ryokan Yunohana Resort Suisen that had a little hut next to its $20 private onsen where you could watch autumn maple leaves fall onto the water and have popsicles while sitting at the doorway... Would love to know more ryokans/onsens like that in Japan! Anyways, my husband and I LOVE watching all of you guys' vids!! It's thanks to you all that we were ok our first trip. And ever looking forward to checking out more places you guys go to!

To Chris Okano, SiO (silicone oxide) is the stuff used to make computer chips. An amorphous solid is a what appears to be a solid, but actually flows at rates measured in months or years. Glass is also an amorphous solid. And you said the sign wasn't understandable.
