Toy Biz has better articulation, while S.H.Figuarts has a better paint job. I don't have the S.H.Figuarts one, but the leg on my Toy Biz figure broke a leg at the knee.

I think it's like you said, it looks better, and most people who buy action figures now have the intent to display them. Toy companies would probably have to expose some joints on the hands to get a thumb moving. Plus, certain hand poses wouldn't look as good (Example: Figurarts fist hand looks more natural than Toybiz's.)
