So today, we will have two presentations followed by a winemaker panel discussion about whole cluster fermentation, the pros, the cons and any specific tips.
Presenting first today will be Drew Horton from the University of Minnesota. He will speak about whole cluster fermentation, the why, the challenges and the how, followed by Dr. Aude Watrelot from Iowa State University on a research project that we have been collaborating on the use of whole clusters in Marquette and Frontenac wines.
Then during the panel discussion, we will be joined by Josh Ellenberg from The Cellar at White oak winery in Iowa, Jonita Boyer from Tassel Ridge Winery in Iowa, James Ballard from James Arthur Vineyard from Nebraska, Russ Funk from Carlos Creek Winery in Minnesota and Bryan Forbes from Gusmer Enterprises in Minnesota.
