This is a yummy cake. I especially like the frosting, but next time I will reduce the non-dairy milk and add 2 Tbsp of lemon juice. Needs something tart to lift the flavours and give it more of a cream cheese taste. Also, I quadrupled the sweetener. It definitely isn’t sweet enough to hit the spot for the average palate.

Hi Brittany! I so appreciate the Japanese sweet potato frosting recipe idea!!! I’m can’t wait to try making it and explore modifications with it. Thank you for this cake recipe. How many servings does this provide and what is the nutritional info? I’m also curious if banana could be used to replace some of the flour and dates.

First job is to find Japanese sweet potatoes here in Germany I have only really notice any sweet potatoes here since I went whole food plant based and found recipes with sweet potato. I will research and find some somewhere for next February which is the next birthday My partner does like chocolate so chocolate frosting might be the option.

So I invented PLAY DOH CAKE!! I made this cake tonight. You inspired me. It turned out looking just like yours. However, I accidentally grabbed Almond Extract instead of Vanilla Extract. I thought ‘what could it hurt?’ Well, the consistency and lack of sugariness, made it taste like eating Play Doh. Oh well. Live and learn. If I added bright blue food coloring....I’d be on to something! 🤪

This looks amazing. I have a question about blending the cashews. I have a Ninja blender but I can’t get my cashews to blend smooth. I tried your nacho sauce yesterday and had the same people with the cashews. Can you tell me what I am doing wrong? How long would it take to blend ? I soaked my cashews for 30 minutes. Also if you have not watched the Happy Pear they are great. Not WFPB but are vegan. One hint they have shared that when you want to get the top of the cake even, use a piece of parchment paper to smooth things out. Love your channel
