I'm 42 and have been vegan for over 16 years now. I first went vegetarian "for the animals" in '97, but looking back, I was still contributing as much to the suffering I was so against; calorie-wise, I had only switched from flesh to another animal product like more dairy and eggs. I am vegan for the animals, but as for my health, I was diagnosed with MS in 2002, I had food and pollen allergies... All of that gone! I don't take any meds, I haven't taken as much as a headache pill in over a decade! Plus, I pretty much look and feel the same as when I was under 30, just way more active! How's that for a bonus for not contributing to the needless suffering and death of innocent sentient beings?

My A1C dropped to 4.7 and for the first time in decades my iron levels are in a good range of 99, instead of chronically bottoming out between 27-50. Also developed plenty of Good cholesterol. My intense chronic knee pain stopped and is now manageable with occasional OTC medicine. My skin tone is brighter and I look younger. I stopped eating anything made with processed vegetable oils, no breads and grains of any kind (but once in awhile sourdough bread), no sugar foods or drinks, only squeezed lemon juice, no processed foods or any with added sugars. I shop mostly at farmers markets for eggs, vegetables, berries, nuts, and local meats. I feel great!!! Age 60.

You can serve it with a little brown rice 100 grams you can cut it down to 50 grams as you go along. Great interview! Her story was terrifying and inspirational at the same time. I am in the process of going vegan and know that it is absolutely essential to reversing my current health issues, and most importantly preventing a reoccurrence of Breast Cancer that I just came through. And sadly never once during treatment with all the specialists did they ever mention nutrition. I’m the one that brought it up and they basically all just said, sure, eating healthy is a good thing. I was just stunned. Our medical Doctors desperately need to have more education when it comes to nutrition as a way to prevent, improve and/or reverse disease. Listening to people like Kate really help. I so wish her continued improvement and good health.

"The healing of the nations will be with My herbs says the Lord." Revelation 22:2 All those greens...good herbs. "The prudent man will not neglect the MEDICINES that grow out of the ground for the service of mankind." Ecclesiasticus 38:4

Interesting. What version are you reading from? The KJV version I have from Ecclesiasticus 38:4 is, "The Lord hath created medicines out of the earth; and he that is wise will not abhor them." I also checked the Apocrypha of the 1560 Geneva Bible and it was very similar to the KJV. (Funny how "wise" looks like "wife" in that old English!)

What a beautiful interview. Chuck you are a delightful interviewer with your sincere positivity and gratitude for the interviewee. I thoroughly enjoyed hearing Kate talk about her journey to wellness with a Plant-Based Diet. I find her an immensely inspiring, intelligent, wise, and warm person. I shed tears at one point when she talked about not having a monopoly on suffering and that her goal is to build others up rather than dwell on her own misfortune. What a beautiful way to approach life. Thank you Kate. 😃 ❤️

@@ogadlogadl490 ... when we were young, many of us stacked up orange crates or other boards on concrete blocks to make shelves, and end tables, etc. Have to pay good money for an orange crate these days.. especially the labels on the ends. My dad worked in an orange grove in Redlands for a while. Tough times, but good memories.

Relative of mine had terminal cancer Dr said there was nothing could be done so he went on a plant based diet and veg broth and within 18 months the cancer was completely gone however his Dr would not acknowledge his diet had anything to do with it and put it down to a strange coincidence. I hear this over and over.

When I first went plant based 2 years ago I spoke to my son and daughter in law about the benefits but then decided that it would have to be up to them to decide if this was for them or not . Well I couldn’t believe it when 18 months later they have both decided to follow a plant based diet - no prompting from me at all . My son has psoriasis and this way of eating is improving his skin and he is looking very trim also my DIL has lost 40 lbs and looks great . My other son has long Covid and diabetes and I’m hoping he will consider taking this route as well !! So plant the seed and hopefully it will grow good luck x
