I noticed you wrapped the fish on the shiny side of the aluminum foil is there certain times when you use the shiny side versus the dull side ?

You know what’s funny? I know you want to use one side vs the other but all these years… I have no idea. Let’s google together shall we? Hold please… Reynold's Kitchen, an aluminium foil manufacturer since 1947, says: "It's perfectly fine to place your food on either side so you can decide if you prefer to have the shiny or dull side facing out." It's simply a result of the manufacturing process. The performance of the foil is the same, whichever side you use.

In the Philippines we usually put "LAMAS" in/out of the fish when we bake it in a grill. Lamas usually contains Garlic, ginger, onion, lemongrass.

So letting the fish get to room temp before cooking is only important when pan frying to get a good crust? Looks like a little bit of sweat could be helpful in this cooking method. Awesome stuff Will!

When I’m steaming I pull right from fridge/cooler. If I’m trying to get a crispy skin yes I let it come to room temp

It makes all the difference. Otherwise you end up with very under cooked onions. And when you start them in the pan and then add them to the fish, they soak up so much flavor.

Any fish really but yes absolutely would work on sheepshead! You can wipe down the banana leaf, to be honest I almost never do

I like this! If I were to do something similar on a Big Green Egg or a regular grill. What temp would I need to shoot for? 350, 400? Granted size of fish amount etc. changes things a little…

We are selling our home and moving to Florida. We are literally waiting for a offer right now. We already have plans for many trees, veggies, herbs, and CHICKENS. Have to grow lemon for sure, for all those fish we will be catching very soon.

I'm so curious as to why cooking WHOLE FISH....Personally I hate having to pick thru bones while I'm eating, I am happy to do it ahead of time while preparing it, but when I want to eat I don't like interruptions....So I'm trying to understand the Logic with this?

I personally would cook only whole fish. The bones have gelatin and moisture in them that help keep the meet very juicy
