Why and how to Lay bet on the Betfair Exchange?

I have been investing on horses since I was 10. Grew up around the best ex jockeys turned investors. They lost in the end and humble ole me with my 1 win 4 places ratio bets...every other bet follows this ratio. I double it if it is a horse I am following. Still alive 48 years later. I have historical data which when invested upon yields results. It pays to know each individual runner by nature.

Why are bets being void in an exchange after it has been matched?

The betfair youtubers generally give advice about cashing out during bets which we cant do in Australia. Also we cant live bet unless we call up and bet a minimum of $50. I dont really see how that's fair
