Tried it and in my view it is overrated. It is more this shock factor. The flavour on a fully ripened Casu Marzu is indeed very strong, for my taste too strong, too tangy and almost biting. This tangy taste you find hardly on any other cheese, no matter how ripe it gets. Even an overripe Roquefort that was forgotten in a dark corner doesn't even come close to it and has still a lot more complexity to it than a Casu Marzu. Casu Marzu also has this amonia smell and taste to it, which i don't find pleasant in a cheese at all.

I was born in Sardegna and I remember vividly being given this cheese with a bowl of boiled sheep eyes to eat froma group of local farmers. I remember that the maggots were still alive and squirming around but I don't remember the taste. I was only six or seven at the time.

if people make cheese, naturally some of it will get accidentally maggot-filled. they said in the video that it was usually thrown away, but some madlad decided to eat it one day and from there it caught on. Definitely wasn't "meant to be made" in the first place

I have the best sheep all around me, the abundent creamy milk, but rather than making manchego or mozzarella, I decide to invent an inferno in the sacred cheese! Only bleach can be combined with Casu Marzu to do what wine usually does !
