I think Infinity War will still happen even if Civil War had never happened at all. Just like in the movie, Thanos will still get the power stone from Xandar, the space stone from Thor's ship (not even Thor and Hulk combined could stop him), the reality stone from Knowhere, and he'll still kill Gamora to get the soul stone on Vormir. Even if the Avengers were still together, none of them know who Thanos is or what he is doing and by the time they do, Dr. Strange will still be kidnapped and taken to Titan where he'll willingly give up the time stone to Thanos. From that point, not even a fully united Avengers would be able to stop Thanos from getting the final stone on Vision's head and despite Thor coming close to killing him with the stormbreaker, he didn't aim for the head when he had the chance which still led to Thanos making the snap. I think the real reason Thanos won had nothing to do with the Avengers splitting up and more to do with the fact that nobody even heard of him nor of his plan. Even if they had, the Avengers have no way of leaving earth to find him or stop him from getting the stones (especially the ones that are not on earth).

No, he wouldn't. Thanos will still collect the infinity stones exactly like he did in Infinity War. He'll still get the power stone from Xandar and even with the combined strength of Thor and Hulk, Thanos still kicked both of their asses to get the space stone. Then, he'll get the reality stone from Knowhere and will kidnap and kill Gamora to get the soul stone on Vormir. Dr. Strange will still be kidnapped and taken to Titan where he'll willingly give up the time stone to Thanos. Even if the Avengers were united, they still don't know who Thanos is or what he is doing and by the time they do, he will already have 5 stones making him too powerful for any of them. Thor came close to killing Thanos with the stormbreaker but he made 2 mistakes like not aiming for the head and wanting Thanos to suffer which gave him enough time to make the snap. Infinity War will still happen even if Civil War had never happened.
