I know exactly what you mean. Im a composer and naturally improvise variations on the pieces I learn. Or if I am practicing a piece and get bored, I just instantly switch to improvising in that style. It helps me learn so much and contributed to almost all of my advanced playing of the piano.

Do you have any suggestions of pieces for a beginner aspiring composer to start improvising in the keyboard? Also, do you any book or internet resource where I can find chord progressions like famous Bach fantasias, nocturnes by Chopin so I can improvise over it?

One time I played Chopin's Eb Nocturne with a very chunky "OOM-pah-pah" waltz feel, and it was one of the most enjoyable times I've ever played it.

Nicely presented...I do play very few Classical pieces and teach too...But I never have trouble improvising in the Classical style. Probably that's why I didn't learn many pieces..And yes I play pop and have diplomas in Jazz piano. I play in church mostly without music..

I feel like this approach to music, that Dr. Mortensen is describing, is presently common everywhere else in the Western music world except in classical music.
