Well, maybe because most carnivores will happily eat them, but there is another reason.
Their elongated snouts act as a cooling system, their flexibility forcing blood like bellows past the thin nasal membranes and therefore losing its heat.
It keeps them cool, they need to drink less and therefore don't have to visit dangerous water holes.
