This always surprised me; I thought offering water to the Sun was an insult, because water turns fire off. However I've read that in Hinduism the idea is that since carrying the Sun in his chariot is a tiring job for Surya, it's good to offer him a refreshment. So you'd offer the god, something that he doesn't have (water in this case).

In religion, The term Sun refers to the ultimate soul, but not a spherical body that provides light in the solar system..Unfortunately misunderstandings are deeply rooted..

Similar to our body, the sun has two parts, one is physical, which is Spherical and giving heat - light. another is spiritual or Chaitanya, which gives life and prosperity, all other things. So, who ever worship sun, he worships the Chaitanya or spiritual part mainly.

I have read that the sun is the son of Dharam Raja and when we die we all go to him to be judged there for giving water to sun we are pleasing Dharam Raja so he would take pity on us.
