Fix your AI. Mesquite is pronounced [məˈskēt]. The 'qu' does not make the same sound as quit, quite or quiet. It makes an 'sk' sound like skit or skinny.

You can tell they don't know how to bbq, the brisket should have had its rub on the day before. Then set out to reach room temperature before putting it in. Then you have to check on it each half hour. The smoke box, not the cooking compartment. 6-12 hours at 250 F.

@@trudypegg437 Depends on the meat. Steak (both beef and horse) I prefer rare, most other meat I prefer well done. And prime beef steak from a reliable source I can and occasionally do eat raw.
