You're missing one important thing. This isn't your supermarket sweet corn. Popping corn is an entirely different strain of corn with naturally harder and rounder kernels for bigger pops.

But popcorn is special. It's a special cultivar that has a hardshell that what enables the popping as it can let the high pressure build up before it breaks and when the shell breaks the sudden drop in pressure creates a micro foam structure from the expansion of steam. If you tried it with regular corn it would just dry out and char, it'll never pop.
