Terri, you’ve been trying the wrong kind of maple syrup. The maple syrup commonly found in stores is more often a mass produced product that is put through evaporators. The highest quality is actually from a producer that evaporates and cooks over a traditional open flame. It produces the deepest and darkest colour and is intensely maple flavoured. I purchase from a friends farm in Ontario, and it is about as dark as the flavour poured into this brittle.

I think putting that couple tbsp. of baking powder in prematurely, and then heating it again, before the rest of it with flavoring, would definitely affect the particular texture, as well as the shape of whole nuts mixed, and mixed, and mixed on the table, may have acted like little wisks, adding even moar air to the body brittle. Nicely experimented!

Random question for whoever would like to discuss - why is maple seemingly marketed as a "fall flavor"? I used to help collect sap for a local sugar shanny when I was growing up and to me all of my seasonal associations with maple are for the early spring when all of the syrup is made.
