Thanks thanks🙏🏻🤭 In my opinion, using stainless steel could achieve 鑊氣 but on a mild level. The stainless steel wok needa be heated up till it turns ‘golden yellow’ too.

Prof McFatty: Impressive tutorial show on Chinese "Wok Hei". Did not know Wikipedia addressed the 2 words. Interesting to see if Encyclopedia capture them as well. Wonder the size of your kitchen to accommodate the cooking utensils you acquired. Lol
