How did I go from being the fake meat guy to not wanting to even look at it.

It's crazy how different you look since dropping that weight. There's a kind of uncanny valley effect because you still look like you but totally different at the same time.

Good job, fake meat is really for transitioning vegans or an occasional convenience. I ate more fake meats my first couple of years in but as a 14 year vegan now, I prefer eating more organic. Love vegetable sautees, rice and peas, mushrooms, and tofu.

I love a lot of veggies and also fake meats. I had a Beyond burger tonight lol. What do you think about lab meat? Would you ever try it? I personally cannot wait to. I am not near DC or CA though. I heard those are the only two states that have it in the US at the moment.

This is a popular topic, everyone talks about ultra processed food etc. Its something we should hear, esp as plant based people. Most know its for holidays or as treats, not everyday consumption! We should be talking about it! The advertising is making it seem casual when its not, price and especially healthwise.

Fake meats have been the gateway food into plant based eating for me. Now that I realize I can eat plant-based and feel full and healthy I am open and excited to eat more and more plant based recipes with or without fake meats. I echo the point about see how the channel evolves because I feel like I have been evolving alongside the channel!

I dont mind a fake meat sometimes but, I never want it to be a staple food for me. This channel only becomes more relevant to me if hes focusing his ingenuity on more whole foods. I'm excited to see how it turns out.

Honestly, what I would hope for this channel is exactly where it seems to be going. The lentil meatballs is exactly what I’m looking for - ways to replicate favs without just grabbing that impossible ground. We’ve been digging our lentil shepherds pie and I’d love to see what else you come up with!

Mark I get that you've passed beyond (pun not intended) the fake meat phase, but I really need to thank you fro demistyfing vegan substitutes for early stage vegans, and also for actuall trying to make sustainable substitutes for people who can't get their hands on those processed substitutes. That is an actual huge contribution to many people's lives, and a real advocate for vegen food with no actual prejudice. Edit: The ammount of food science and actual micro gastronomy you've brought into our lives is on a level that could be on Heston Blumenthal's but at an accessible medium. I remember those sausage casings in algenate, that's just genius.

I tried one of your recipes for the first time the other day, the lentil tacos, because I am trying to phase away from using so much processed fake meats, which we use once or twice a week. Those Tacos proved to me there is a whole world of new foods to try and I will be going through your backlog.

You know that the vast majoirty of things that vegans eat are beyond processed right? Like not even taking tofu but corn, staw berries, apples are the resalte of thuesndes of years of selective breeding a type of process right?

Also you know that noone can drink non processed water right ether pure water, cleaned water? Like how is cutting am potato and baking it processed when using massive machines and chemicals to clean water not processed?

Thank you for being so open and honest with your health journey. My journey has been similar to yours. The "fake meats" were helpful to transition to a fully plant based lifestyle, focusing more on the less processed, WHOLE FOOD options instead. I've been using beans more as my staple, main meals. Like you, I feel so much better cutting down drastically on the more processed foods. Thank you again for all you do!❤❤

Veganism had such a huge role in me staying sober. Without going into too much detail, I was one of the addicts who quite literally destroyed thier body. The type that took months to medically detox. I went fully vegan 2 years into my sobriety. I have 12 years sober now. With each year, I seem to add something else that’s ‘healthy’. Sometimes, it is a new responsibility or being more active. As the years went by, I also, started to cut out the more processed stuff. It’s a treat now, and I partake at most twice a week. The journey of health and, for lack of a better term, serenity, is an interesting one. Keep up the good work and do what’s right for you! I always hope to see some new ‘processed’ recipe once in a while; after all, I only consume them in the same time frame.

Im so happy for you in your journey ❤️ My boyfriend loves the fake meat but he’s become a runner and has also started to notice it doesn’t make him feel good. So I really appreciate that direction that you have taken the channel!

as with any ultra high processed food - it's a treat for a cheat day, and not something to consume regularly if you want to live a long healthy life.

Exactly! I really only use those things for holiday dinners, otherwise we eat pretty healthy in my home. We're all addicted to lentil tempeh currently. 😅

True. I use fake meat only as enhancements to my vegan legume and vegetable recipes. It's great when used in small amounts. I don't do restaurants or junk foods.

@gasha2-tu5uh/// speaking of soups, remember to keep your leftovers for soups. Even pasta sauce makes a great soup, like Italian Bread Soup, with fresh basil. The broth of boiled potatoes and broth from "beyond" beef" is also excellent. Make your own creamy soup with vegan milk, I make my own soy milk with an electric soymilk maker only takes 35 minutes, boom! you have an excellent milk base, add mushrooms, celery, onions and thicken the soup with a little mashed potato leftover. It's a wonderful winter soup. In Canada we know soup!! Take care and bon appetit!

I live in the subtropics in Australia and eat soup almost every day! It's one of my favourite things to eat, no matter what the weather. Cheap, healthy and filling.

I really love the change in the channel, you look healthier, happier, prettier... been watching you for long, always entertained by your videos but without replicating almost nun since I live in a small town in Colombia. 4+ years vegan and never tried a fake meat before, the access to that products here is so difficult lol. So what i've always eaten is basically what you're eating right now: fruits, legumes, fresh vegetables in general, that is mi diet by default (there are lots of fruits and cheap as hell in the tropic). I also think it helps spreading the image of flexibility in plant based diets. People think plant based diets are so restrictive and just equal for everybody, but we know that's not true. thankfully, the change you're making it's getting someone like me, in my context, closer to replicate your aweome recipes. Tofu, I love the stuff. I also make my own soy milk...I keep the pulp after filtering. Dehydrate the soy pulp and use with green lentils and a little fake meat. Boundless imagination compels me!! Besides it's fun.

I honestly believe, with the exception of people who are allergic to soy beans, anyone who doesn't like tofu hasn't had it well prepared. I made an entirely vegan orange chckn meal with tofu which non-vegans raved about! Likewise, vegan "ham" recipes. It is so delicious if you know how to prepare it well.

Awesome shift. I've been eating plant-based for going on 4 years and really have enjoyed the health benefits, but I confess I started eating more and more fake meat and I'm recently switching back to more unprocessed plant-based food and have seen an immediate boost of energy and just an overall better sense of well-being. I'm excited for this change, because as awesome as your fake meat recipes have been, I'm sure your whole food plant-based recipes will be even better. Bravo!

dude, it didn't matter the directions your channel went over the years, I just kept watching it and I just ketp really interested in everything you had to say and show, and I'm pretty sure I'll keep following you for years to come, I feel your content actually got better and better edited over the years. I love inventive bean recipes - there's so many beans out there and I feel a lot of recipes only use green or red lentils, chickpeas and black beans. Would love some bean diversity!

I am so happy you are changing how you eat. I am not vegan but do LOVE to have several meals a week that are meat free. I noticed on the days I was eating "fake" meat my body didn't like it so I just gave up the fake meat. I am looking for good clean meals that will not stress my body out. Please feel free to show what you are making and all the changes. It really does inspire me.

Keep following your path💪. I’ve been in a similar situation as a Vegan chef and made multiple dishes in my takeaway restaurant with meat replacements, some ready made and some homemade. Since I had to close my restaurant nearly a year ago (I already did an extensive WFPB course by forks over knives) I’ve been walking a new path, eating over 90% plantbased whole foods, losing over 40 pounds and taking up healthier habits like running and calisthenics. Even though we might lose some following on one end we will gain more on the other. The right people WILL find you. Wish you all the best and now I will keep following you even closer🤗.

First of all. You look GREAT. Secondly, I am SO excited about the non-processed fake-meat path you're on, mostly because I feel the exact same way about eating more stuff like legumes. Eating fake meat is awesome, but it really feels better to be a lot more varied. Traditional indian food and vietnamese food(anything asian, really) is something I would love to see you dive into, there's an abundance of colorful and healthy dishes from all over Asia that are completely plant-based.

Lately i've been doing the same with just eating large salads with tons of variety instead of things like Gardein or Morningstar daily and I have to agree, it feels much better. Also thanks for continuing to make content but please stay safe during this hurricane. It looks rough in Florida.

There is nothing wrong with changing your content with how your life has changed. I'd love to see a What I East in A Day video. WFPB is something I have been really striving for each day. Would love to see what you eat!

Thanks, Mr Stache, for your thoughtful remarks. A lot of us vegetarians out here needed those familiar meat tastes as we moved into healthier (and animal-friendlier!) eating, but taking a step back to reconsider that and the industrial element is very helpful. Why we eat what we eat, what’s better for our society, etc. Great video. That, and your fake meat recipes were often REALLY complicated. 🐮 11 years veg and plan to continue.

I think your transition is evolution. I too have evolved to what makes me feel good. I am a 64 year old runner, retired, and have noticed what makes me feel good on my runs is what I ate the night before. A healthy pasta dish works best. I struggle with beans as I don't really care for them, same as lentils. A lot of tofu. I would like to see more mushroom main dishes on your show and where one can buy them.

Speaking of beans, I love the 15 bean mix! I add a bag (unsoaked without the packet) with 8 cups of water to my Instant Pot, set it for 45 minutes with natural release. Voila! The creamiest beans ever!! You could add onions and garlic, but it doesn't really need it. I live with someone who's on a low sodium diet, so I just add soy sauce and salt to my bowl with some olive oil and it's amazing! Cheap, easy, and delicious!

Everyone can do it! It's making a decision and sticking with it until you hit that goal! Just be good to yourself FIRST and know that it's lots of little tiny changes that will make a difference over a LONG period of time.

I've always loved the content, not for just the recipes, but your enthusiasm towards cooking as well. While the fake meats were great, it could feel more like a laboratory sometimes. What you're coming up with now is way more accessible, nourishing and just hits the spot in a way that most processed food can't. Keep doing what you're doing mate, we're behind you!

Honestly, I found your creating fake meat videos interesting from an educational point, but nothing I would ever make at home. I am quite enjoying the newer direction, as it lands in a space of what techniques and combinations I may actually try at home more often. I think I found your videos through the fake meats, but that's is not why I stuck around. I stuck around because you have a great personality and an enjoyable and easy to follow way you do your cooking and it just makes the videos, whatever you are doing, more enjoyable. I completely support the new direction, but I can understand if there was any anxiety around "the algorithm" or an audience that wants the same thing forever.

Honestly, your personality is more important than the types of foods you share. I enjoy how both of you interact and share your thoughts about how things taste, what the experiences are, and then I consider what I can eat (I have a few food allergies).

I don't normally comment but felt compelled to today. I've been a vegetarian for a long time and recently have become mostly plant based. I've never been a huge fan of all the upf fake meats. Honestly your lentil taco recipe is the first one that made me want to actually try something from your channel because it's real food. Looking forward to wherever your creativity takes you.

Definitely enjoyed this video more than the past few. It was positive, honest, and relaxed. The previous videos seemed to have a tent of defensiveness or ranting about something unpleasant. You’re talented, healthy, and on a successful track; your videos should reflect that and not give acknowledgement to haters or products that don’t work. I’m looking forward to your new content! ☺️

I love this change! I’m so excited for all the healthy recipes to come. I’ve been changing my diet as well. Not restrictions, it’s really just that I’ve acquired knowledge and it feels wrong to buy processed foods when I can eat better tasting food that feels better to eat. I’m getting into making my own tofu and yogurt and kombucha and all sorts of fermentations. I’m even getting into making medicinal tea blends. The world is shifting with you. The more we learn, the better we do.

Keep it up. 🧡 I was just thinking that whenever it is not a huge hassle for you, perhaps you can show us recipes that can be made with either non-highly processed ingredients or fake meats. To me, fake meats are also something that saves me time and make meals for my partner, who has slowly transitioned away from meat, more reminiscent of what he loves. So perhaps our journey isn’t where yours is yet, but I’d love to get there in time!

Everything you do is brilliant so I'm sure this next chapter will be no different. I personally don't do a lot of the fake meat stuff so more of a natural approach is right up my alley even though I love watching you mimic meaty or vegan meat recipes. Been following since the beginning. xo

Love the journey you have been able to make in your life. Totally notice the same things in my life when eating fake meat, so I'm still evaluating it's role in my life. I would love to see new videos on quick flavorful meal recipes. Maybe some of your dinner staples. I love when a unique spice blend or sauce can transform a simple dish into something special.

I always enjoyed your channel, but as someone who moved passed fake meats 4 years ago I found that I never tried your recipes. I still eat fake meats occasionally for the fun of it, but only when I eat out so they don't form a significant part of my diet. im glad to see that you've made the shift in a positive direction, nothing beats fresh fruits and vegetables. I look forward to seeing your content and trying your recipes from here on out.

Keep it up! You are doing great! I found you by looking for recipes that mimic meat, some recipes worked, some didn't work for me. However, we are eating plant based with minimal fake meat. Your way of exploring recipes and making them your own is very much the way I am cooking. I'm somewhat obsessed with lions mane mushrooms and other mushrooms, thanks to Derek Sarno, but can't get them very often. Either way, keep going with fresh plant based cooking!

I am actually very excited that you're growing this way! I am also trying to limit the amount of processed foods my family has been having, and on my own weightloss journey. I would love more tips and tricks for making good, plant based foods. Fast meals for the week would also be really helpful!

I'm very interested to see where you'll go with this! I've loved your content so far and I know I'll love what you make next. It also aligns with my own feelings that I might be eating too much processed stuff. I just feel better, even if its just placebo, when I'm eating whole foods and I'd like to rely less on processed foods and cook more wholesomeness. So your content will help with that I can only imagine 🙂

i always saw your projects more as a fun endulging in what was possible. honestly, i wasn't even aware these things were sort of your daily food. i'm glad you figured out you were stuck and switched things up accordingly. legume stews/curries are definitely an amazing category of dishes. i served up some chickpea curry when i was in hospital last year and we had a communal kitchen and everyone loved it. i'd recommend you pick up some lesser known spices at a desi/asian supermarket, like hing/asafoetida, black cardamom, ajwain, kalonji/nigella, black mustard seeds.. and try different combinations - it's so much fun! oh and try frying up some ruccola with garam masala and chickpeas or diced potatoes - it's amazing and a great way to use it up when it's gone limp but not yet bad. another great kind of dish is "vegetable fajitas" - onions and peppers as usually, just sans the meat, but you add zucchini and mushrooms (regular agarics or oyster, nothing fancy) and of course beans. add a good home-made seasoning mix, salsa and guac and it's insanely delicious. if you need more protein this might be a place to toss in some seitan to wick up all the juices; never tried it but i bet it's heavenly. oh and speaking of oyster mushrooms: try frying those out as if it were bacon, add some black pepper as well as lemon zest and juice, and let that go on a salad. btw i personally am neither vegan nor vegetarian but i really only eat meat occasionally _because_ there are so many delicious vegetable recipes once you get your mind off the traditional ideas.

This is honestly the way I've been looking to eat for a while now. I've given up most of my fake meat except the chickpea bacon I make, but now I'm stuck in a void of what to replace it with. I'd love to see more recipes just like that lentil stew you shared here!

I think this is one of the most important videos you've ever made, Mark. Like many people I first started following you for your inventive meat alternatives, but as times goes on it seems we have made many of the same discoveries and very similar eating and lifestyle changes. The end result is that I've arrived at much the same place as you. I'm fitter, I no longer smoke anything except tofu(!) and I've come full circle with my protein choices. The experimentation with fancy meat analogues was fun and educational, but at the end of the day nothing beats the incredible versatility and healthiness of legumes, tofu and mushrooms. It's great to be on this adventure with you Mark and I look forward to seeing where it takes us next.

I'm so happy about this change, I love homemade healthy food that my whole family will enjoy, and that does not take an expensive shopping trip to exotic stores to accomplish, just your everyday ingredients that I would most likely have in the fridge or kitchen cupboards. Nut free if possible, or at least a nut free option. I cook fresh most days, but we are stuck in a rut, a pasta and fake meat rut, so any suggestions are going to really help. I'm looking forward to see what you come up with as I have loved the flavours you have created so far.

I’ve been watching you for years and it’s really amazing to see your growth and I’ve been trying out your recipes over the years tweaking them to make them my own. I completely understand what you mean by being over it! I’m pescatarian, but I try to limit my consumption of fish seafood and vegan meats to where it feels more like a treat.

I knew it! My girlfriend and I watch your vids and I used to say, "he's gotta be cheffing while high". I've been watching your vids for years. Still use your jackfruit drummies whenever I have a hankering for buffalo wings. I feel we all get to a point as "fake meat vegans" where we grow to the next level. Thanks for sharing your journey. What I'm exploring is playing with a basic dish like your lentil stew to satisfy my cravings for exotic foods...how to make something fit into an Indian meal, a Korean meal, a Thai meal, a Moroccan meal, etc.
