Then u r subject to whatever price they give u. I can easily sell my stocks online in mere seconds. Bullion can also be lost or stolen. You don't get any dividend or interest payments for owning it. Unless u view it as a collectible, investors should stay away.

Reservation demand is a demand that is expressed by holding onto something that you own and for gold, it is the 97.4% of the total stock of gold. People who hold gold are demanding it by holding it off the market.
