► Lomo Saltado 🥩🇵🇪🇨🇳
300g beef steak (or king oyster mushroom)
1 large red onion, cut into petals
1/2 aji amarillo or orange bell pepper
1 spring onion
1-2 plum tomatos
2 Tbsp pisco or brandy
2 Tbsp soy sauce
1-2 tsp ginger juice
1 clove of garlic, minced
cilantro
friench fries / oven potatoes
rice

Peru is magnanimous & has acceptance. They label the food-influence as contribution to the country, rather than dismiss it quietly.

THIS IS SO IMPORTANT. I am glad they are giving credit and actually label the influence as it shows respect. Unlike America that likes to steal from colored people's creativeness and pass it off as "American culture" so the creators are not given proper credit. it isn't hard to give credit. Makes you think if things like these are intentional.

So you say that Lomo Saltado is not found anywhere in China. But get this: I am Vietnamese, which was once a suzerainty of China, and I grew up on a potato, beef, onion, tomato stir fry that was eaten with rice. We did not have the chili that is essential to Peruvian Lomo Saltado but it's 90% similar. When I first had Lomo Saltado in my 20's, I was transported back to my mother's kitchen. We had this every week. Every Vietnamese has this as a home dish. It's not in the restaurants. But it is part of the home cook repertoire.

In peru it is also a dish that one eats at home, the fact that it is in restaurants does not make it exclusive, I eat lomo saltado every week and I am poor as fuck.

Hi bro, only chifa is peruvian chinesse food. Chifa is only a little parte of peruvian gastronomy. Also we have Nikkei food, that is peruvian japanese food, and also, it's only a little part of peruvian gastronomy. The true peruvian gastronomy has uncontable dishes.prehispanic dishes, creole dishes, coaste dishes, andean dishes, amazonan dishes, Novo andean dishes, not only that, un Perú there are 25 regions, and every has a typical dishes, without chinesse ir japanese influence, only heritage from old peruvians. Y bueno, hermano, espero pruebes tantos platos peruanos diferentes, y una acotación para este video, el lomo saltado tiene solo el salteado chino, todo lo demás son ingredientes peruanos que siempre se han usado. Sabías que Perú tiene más de 3 mil variedades de papa? Pues en Perú se la domesticó. El tomate también es de origen peruano, al igual que el pisco (aunque esté ya es un producto elaborado, y te recomiendo purebes el pisco sour, chilcano de maracuyá, cóctel de algarrobo a, que son a base de pisco). La cebolla y el vinagre lo trajeron los españoles, al igual que la res, pero el lomo saltado lo único chino es la forma de saltearlos al wok. Saludos desde Lima, Perú 🇵🇪😁

I am impressed with the Chinese folks who have settled the US, Canada, Central, and South America. They learned and assimilated into their community's culture and brought their culture for other people to enjoy. The Chinese immigrants have really learned their Spanish very well. The places I have been too around the world besides the US. Europe and Asia has had China Towns with the exception of the Middle East like Iraq. Kuwait has a small tiny community. Peru is very impressive with many other nationalities that came to that country. I found out the Japanese were very dominant. I was impressed with a Japanese tourist that came here to Las Vegas who couldn't speak English but spoke South American Spanish. His family for many generations lived in Peru. I have also understood Chinese folks from Peru come here to the US and blew me away with Spanish and English.

it's so strange and beautiful at the same time to learn that we all have different history..and in the end.. food always bring us together..what a great video..and i have learnt a lot about Peru... not related to foods tho..there is one famous Peruvian Japanese scientist Marino Morikawa..his works are very inspire ... about Eco-friendly water treatment project

You're welcome, Peru was the capital of the Spanish colony over 500 years and as the Chinese migration here are a lot of African, European descendants, so is a fusion of culture and of course food.

Cool video! I’m from Lima living in the US now and I actually remember back in the 90s when china town was gentrified ... by experience I noticed Lomo saltado is one of our most “foreigner friendly “ foods

Thanks for the great food, culture and peoples video, Andong. I'm a Canadian-Chinese whose parents immigrated from China. I visited Peru a few years back with my family and we were amazed at how many chifas there were in Lima. Our tour guide told us it was the most popular restaurant type in Peru, as your Vanessa Yong confirmed. He also suggested that some 10% of Lima's 10M population were of Chinese descent. Equally fascinating is the similarities of Chinese immigration and cultural integration in many parts of the world. The observation that Peruvian Chinese worked on their railroad is a parallel to the establishment of Canada as a country connected from sea to sea by our railroad, one that was built in large part by a Chinese labour force (my grand uncle was one of them). I look forward to seeing more episodes, your movie and visiting Germany at some time. Cheers. Norm

Actually is true, between 9~10% of Peruvian Population has Chinese Roots, because there were thousands and thousands of Chinese people who came to Peru. The majority of them were extremely poor people but by the time they knew how get the chance to develop in a country which was not ours. Today, many of grandsons and grand-grand-sons of Chinese imigrants have became important figures in Cultural, Sport, Political and Artistic aspects for Peru. For example, the biggest franquicie of Supermarkets WONG, was funded by a Wong family, etc. Other story is about Japanese migration, even Peru had a NIkkei(Jap-Peruvian) as President of the country in 90s. China and Japanese, and Asia in general, gave many important things culturally to Peru and we are thanked by that. Greetings from Lima!

It's fascinating there's a sizable Chinese community in Peru considering how far they are, basically diagonal on earth. First time had Lomo Saltado in the States many years ago when I wasn't even aware of the existence of Chinese Peruvians, and it immediately reminded me of Chinese food.

Ecuadorian here........ As much as I love food from Manabi here in Ecuador...... I feel that Peruvian food is a noch higher and truly in a class of its own...... It's that Asian fusion that is just so good

Soy peruano y me encanto este video porque se preocuparon en buscar expertos en historia de la cocina peruana y tambien la historia de los chinos migrantes al Peru en los años 1840, videos asi hacen que este canal se distinga de los demas ya que promueven la historia veridica de nuestros lazos con la cultura china en la gastronomia. Cabe decir que no solamente con la cultura China, en realidad el Peru es un pais de todas las razas nuestra comida tiene influencia de casi todos los lugares del mundo incluyendo comida japonesa, italiana o hasta musulmana por ejemplo y estamos orgullosos de tener un poco de todo el mundo aqui mezclada con nuestra cultura milenaria que fue la de los Incas. Solo los peruanos y los visitantes que aman nuestro pais saben de lo que les hablo.

El lomo saltado no es de origen chino, es una comida fusion de comida peruana con china, el lomo a la chorrillana mas antiguo que el lomo saltado y solo agregaron algunos ingredientes chinos como el sillao y lo cocinabam en wok, la papa frita no es de china y un lomo saltado sin papa no es lomo saltado.

Peruvian / Japanese, foodie and amateur cook here, I usually roam around trolling peruvian food videos because the history behind it isn't well described or well shown in the video, but God damn this video is on point in history and in preparation. really, Big thumbs up for you hopefully in your stay in Lima you learned there's is a history behind Peruvian food and japanese traditions and will make a video about it. Yes! Finally the continuation of the Chifa series. It was great, thank you. I think the exploitation of Chinese people for manual labor is still happening in Japan. They are brought in through internship programs where they are supposed to be taught skills that can help them get better jobs, but they just end up being forced into low skilled manual labor jobs with low pay.

This video reminded me of when I visited Mexicali BC years ago. I never thought that visiting Mexico I would see a Chinese restaurant on almost every block. Then I got to visit a place called la chinesca which is Mexicali’s barrio chino and learned a lot

Norwegian guy here who grew up in Peru. I love this dish, one of my absolute favorites, the flavors blends so well, it's an absolutely great dish. Thanks for teaching me how to make it, as it has been a mystery to me for some times, I'll try to make this for me and my parrents to get that sense of nostalgia!

Went to Peru in 1998, there was a very nice restaurant named O-Mei, (鹅眉)in Lima. Don't know if it's still there, but my Mom (who grew up in Hong Kong and used to make 番茄🍅牛肉🥩(similar to lomo saltado, which someone else on the comments said was very popular in Vietnam, which is geographically right next to Vietnam)with rice 🍚 in the 1970s a lot in the USA, couldn't stop raving about it (O-Mei restaurant).🥰

Fascinating! A similar thing happened in the US. The end of slave labor in America after 1864 saw decades of administrators scrambling to figure out a way to replace all that labor. It's what caused the rise in prison labor and the Jim Crow laws that targeted non-whites. It's why a century later in 1964, we had to have the Civil Rights Movement. It's still a problem. 25% of the world's prisoners are here on US soil or in some foreign detention center right now. That explains why so many nonviolent cannabis offenders are still locked up even though half the nation is enjoying it recreationally, they just can't afford to let go all those cheap laborers. It's a tragedy.

I've been eating this dish since I was a baby but my favorite Peruvian dish is Aji De Gallena please if you have not tried it please do. My family had a real successful seafood restaurant on the coast of Lima in Callao called La Rana Verde. So many good memories thank you for this video!!

An aji amarillo is very spicy, the bell pepper is about the same flavor profile, but add half or 1/4 habanero pepper to get the heat right.

As a Chinese who live in North America, I love the Peruvian restaurant in my neighborhood. The sundried potato pork stew they have tastes just like what I had in Northeast Chinese countryside.

Cerviche is common in all Latin America, Lomo Saltado is distinctly Peruvian.

Truth to be told. We peruvians consider not only 1 dish a "national dish". For example, pollo a la brasa, ceviche, aji de gallina, lomo saltado, arroz con pollo, tacutacu, etc. You name it, there is just to many dishes to not consider.

here in the Netherlands the Chinese restaurants mainly serve Indonesian food (we still call it Chinese food though) well, this is because Indonesia was one of our colonies (the dutch indies) however it is not that simple. the Indonesian islands were first colonized by the Dutch in the early 17th century the food they found there was nearly the same as it is now but the Portuguese came there nearly 3 quarters of a century earlier like the dutch the Portuguese had the good habit of writing everything down in ships journals so we know what food they were presented with and it was far more meat and veggie-based they would dig a hole in the ground throw in rocks light a fire on top of this and after the fire was just simmering coles they would put food parcels made of leaves filled with meat or/and vegetables on the rocks and bury it and then for it to be later excavated and consumed. so no noodles soups or rice! so somewhere in between the Portuguese and the dutch, there must have been a Chinese landing so Indonesian food is also part Chinese, and dutch Chinese food is, therefore, more Chinese than you would first think.

theres also other popular Chinese influenced dishes in peru. when I was in cusco where the weather was colder and the higher altitude, a lot of people ate at noodle soup restaurants. it was mind boggling seeing native Chinese peruvian people. sure they were Chinese, but everything else about them was so peruvian.

Just tried it: that spice mix works for red lentil soup, too;-) Stir fry yellow chilis, onions, garlic, add washed red lentils with water, later light and dark soy sauce, white vinegar, a bit apple vinegar, a bit sugar, cumin, salt, pepper. WOW!

My father immigrated from China during WWII and settled in Lima. And yes, Peruvian food is great, and Chinese food too. Imagine the combination of both in the lomo saltado dish....Superb!!!

That's really cool. I had Peruvian food a while ago and were blown away how Chinese some of the flavours were, now I know why. It's also cool to see how national food and flavours can change over time. I grew up in Sweden in the 70s and back then pizza and kebab was something quite uncommon, but fast forward 40 years and _kebab pizza_ (yes, that's one dish, with garlic sauce on top) is a very popular dish. Give it another 20 years and pljeskavica and ćevapčići will be parts of Swedish cuisine.

Originally from the Philippines, been in the states for decades now. But anyway, Phils claim to have the first/oldest Chinatown. Not sure it’s true, maybe, but gets to show how proud Filipinos are of Chinese integration into our culture. The Chinese are very resilient and hard workers, so much so that more than half of the 10 riches ppl in the Philippines all have Chinese heritage. Growing up we call Filipino Chinese “chinoy”. We celebrate Chinese ny, have a lot of beliefs after Chinese culture and of course most of our food is also a fusion of Chinese. Our famous “pancit” or noodles, as well as the lumpia, which in the Phils we refer to as “lumpiang Shanghai”, I’m sure both originated from China. We just took the credit, because we popularized them 🤣 PS: in the Phils they stereotype (the good kind) on Chinese/chinoys, Filipinos say the Chinese are very good with running a business, they sell for small profit but in quantities. Chinoys or full bloodied Chinese in the Phils have established themselves as great and successful business ppl.

I'm a vegetarian and I use beef-styled tvp to substitute the meat and it works perfectly, much more "authentic" than mushrooms imo 😆

Great video as usual! We had the opposite issue here on the west coast of america, LA, San Franciso etc. The term "shanghaied" was because in the wild west if you lost money or were too drunk you could end up on a boat to China as a slave. I love how Chinito speaks spanish, It sounds very Andalusian to my ear. Lomo Saltado fries in LA are always a bit soggy, not sure if that's Traditional. I'd add a jalapeno to that yellow bell to get the Aji amarillo flavor.
