I remember almost 20 years ago I went into Chinatown in LA to find these and the shop owners looked at me like I was a DEA agent. At the time the peppercorns were banned from the US because of a fungal disease they carried. Of course I did not know this. All I knew is a recipe I was trying to make required them. I laugh about the scared expressions on the shop keepers faces when I asked for them.

I eat this in Tibetan/Nepali dishes. It took me a while to get used to the taste but now I love it and use it in almost everything I cook 😍 I call it Timur :)

Sichuan peppercorn is an amazing godlike gift to foodies. I have not tried any extreme dishes but I've had it as a hot pepper dip for grilled pork and beef. And its truly amazing....a life changing food moment. The dip only had smoked thai hot chili peppers, sichuan peppercorn, fish sauce, lime, black pepper, garlic, and shallot. I wanted to straight up drink the dip, thats how good it was.

I want to know the botanical name of the one in sichuan the region, im guessing they are different plants at play here. Would have been nice to bring an expert botanist. I'm growing zanthoxylum simulans but don't know if its the same one, zanthoxylum piperitum they say is the better flavor raw but is used in Japan and Korea

I am from Burma, and I used to consider that it can only be found in south-eastern part of Burma(Karenni State). I didn't know it is native to China(Sichuan) until three years ago when I saw it at a supermarket in Macao.

It took me years to find a good supply of these that weren't stale here in the US. They lose their volatile compounds very quickly. The difference between fresh and an old is night and day.

The Sansho of Japan is another specie that is a cousin to Sichuan Pepper, however the leaf tips are used instead of the berries. leaf tips and powdered like Matcha Green Tea.

Andaliman is not Sichuan pepper. It's missing the 'numbing' sensation entirely, and it has a stronger citrus flavour.

The sichuan peppers used to be prohibited from bringing into US noncommervially due to the chemical content. And due to importation laws the sichuan pepper has been heat sterilized which will leach some flavor chemical. ALSO, China has many different species of the same family that have similar but stronger flavours.

Nico Zhang This was prohibited in US..not Canada...up thru the 90s. But even if you brought fresh or in a bag it would still get confiscated as it was considered an “agricultural product” because store bought imported spices are steam/heat sterilized.

Sichuan Peppercorn is unrelated to chemical in pepper spray. Chillis are a nightshade plant ... sichuan peppers are berries from the citrus family.

Sichuan peppercorns are not spicy at all! They are merely tongue-numbing. The spiciness comes from chili pepper.

I really enjoy your channel but I totally disagree with your approach. Although I love to be educated, I find very problematic to expect that or imply that the best quality peppers, or any ingredient, should be exported to other countries than the country which has produced these goods. I enjoy Chinese cuisine, but I strongly despise that commercial idea that we ought to have the best things of a country even more than its citizens themselves. I also constantly see it happen in South America, being Brazilian I pay more for cashews and Brazil nuts, than Americans or Europeans, considering the price per kilo and the minimum wage in both Brazil and other international countries. These happens because the demand for these products is high and living in a capitalist world huge farms and industries prefer to sell internationally and earn dollar that let us Brazilians have access to these products. This also happens with other food items as well, as Quinoa. So it is not an exception. By no means, I'm against cultural exchange, but to take parts of someone else's culture without considering the impact to the life of those that cannot pay the extra fees for their essential ingredients just because of global demand is basically wrong. I solution would be to invest in production of ingredient like Sichuan peppercorns in different places and countries across the world. Even if legal permission was needed these could be arranged by companies and governments with Chinese government. I say all this with all respect and care, as I've been watching your KZbin channel for sometime now. I don't mean to attack anyone, but to stress a pattern of consumption that may have social impacts on many lives.

As a Chinese I can assure you that there's no need to worry. These high quality spices or other stuff are mass produced in China and only a small amount of them is exported, because basically there's far bigger market in China than in other countries as these things are really uncommon outside China. Sichuan peppercorn is the soul ingredient of Sichuan cuisine, we use them A LOT.

You bring up a good point. I've had the same thoughts about Brazilian ingredients that became trendy and other "superfoods." Especially when U.S. companies make their own version and sell it as some exotic health food when the native cultures already have commercially available products and traditional recipes.
