Just the different ways he cooks the oxtail. Searing it on the grill, smoking it, then pressure cooking it. Making sure to layer and season all those flavors with each step in the process. You can't go wrong with good oxtail and this looks amazing. That Jamaican chef is amazing at what he does you can feel the pride he has in his craft.

I'm drooling! This looks soooo delicious and reminds me of my mother's cooking when I was a child. The whole process. We would cry for hunger before the meal was ready, except if we were lucky to get a piece of pastry while waiting, because it had to be done "just so!" You couldn't speed up the process. I learned to cook by just watching her in the kitchen. Those herbs, the sauces, the loooong simmering over the fireside and stove top. There's nothing modern that can compare!
