They're the same chords just instead of 4-1 a 1-4 is shown. There are big numbers in the screen when the change happens so you don't get confused. Exact notes dont matter when you talk about scale degrees

How do you know if notes go good together, is there a certain rule you follow? You always say in your videos “if you use this note it you can go to this note”.

You need music theory for this. Start by looking up what harmonic functions is

Imo the most impt aspects are key and instrument selection. In a very general sense, there are certain keys that sound angelic or certain keys that sound dark, etc. If you combine that knowledge with knowledge of the timber of certain instruments (like sax sounds jazzy or trumpet sounds Regal) you are mostly there as a composer. Of course, you also just have to iterate on this ad naseum to find the perfect sound.

Also, most music just plays off basic scales and chords. Like the classic up and down (do ra me fa so la ti do), or arpeggio (do me so do, or 1 3 5 8). For chords, seconds and thirds for tension and fourths and fifths for relaxations. Honestly, just play around with any piano with these concepts and you can pick it up fast.
