I ran a kitchen at a maximum security prison for two years. The inmates menus included Salisbury steak, pizza, spaghetti, baked chicken, and fish to name a few. Breakfast consisted of eggs (scrambled), sausage patties (non-pork), toast, grits or oatmeal, and occasionally cinnamon rolls. Lunch was always a sack lunch, sandwich, chips and cookies. Fruit was served at every meal. Some of the more popular deserts were ice cream and fruit pies. I would often eat the meals provided because we had to evaluate the meal, we would select a inmate at random to provide feedback on a "tasters sheet" as to the meals quality as well. The portions (in some cases) were smaller than I prefer, but overall not bad.

A friend of mine ended up in a private prison in Arizona (Florence). Working in the kitchen, he often noticed that the canned foods were clearly marked Not For Human Consumption.

25 years in corrections. Nutra loaf (food loaf) is NOT supposed to be disgusting. There are no toppings or liquid on top after cooking. It is also not "disciplinary food". It is an alternative to a normal meal on a tray. The inmate will be put on this diet is they misuse human waste (i.e., throwing feces, or urine at staff or inside their cell) as this is a health violation in most institutions or if they misuse the normal food, the tray or any eating utensils (i.e., throwing the tray/food at staff, or sharpening a spoon into a weapon.) as this is a safety issue. They will be on the diet for three (3) meals, not weeks at a time. And the inmate's behavior will be re-evaluated after the 3 meals to determine if it needs to be extended, but it very rarely is. Also, I can't speak about the 1600 in Europe, but I think the inmates in US prisons today eat better than the kids in our public schools do. And yes, I've eaten the same food as the inmates for years.

Food quality varies by institution. I was a CO for 8 years. The jail I worked at allowed the officers to eat in the chow hall the same food served to inmates. Admittedly, some stuff was better than others. But, I never came across anything really nasty or of low quality. I ate in there almost every day. I didn't partake of the fish because I don't eat fish period. But, I'd still eat the cheese grits that day.

Your wife would survive longer. Has the skills to "cook" with random ingredients. Eat or starve. The staff does not care.
