The green paste you've been eating with your sushi isn't really wasabi. If you check the ingredients on the packet, you might see a mixture of sweetener, horseradish and perhaps a small percentage of the real thing. Real wasabi is hard to come across and it can cost $250 per kilo. So what actually is wasabi, and why is it so expensive?

I've never really enjoyed Wasabi, because it usually tastes far too similar to horseradish, although I still use a bit whenever I eat sushi. However, I distinctly remember one time I got sushi, I fell in love with the Wasabi. I think the person who described it as "tasting like Wasabi, but without the horseradish flavor" was absolutely right. It had some spice, but was also slightly sweet. I've never looked into the difference between "common" and fresh Wasabi, but I knew that most had to have horseradish, which has always been to harsh for me to enjoy anything with it. I'm glad this popped on my recommended.

Yeah, if you look at the ingredient list on a tube of wasabi paste or can of powder, the first ingredient is horseradish and the second is usually mustard of some type. If they have any wasabi in them at all, it’s a veeeeeery tiny amount. I don’t mind the fake stuff in small amounts, but I love real wasabi because I find the flavor and spice balance much more pleasant.

Real wasabi also rots very quickly, unfortunately. I live in Shizuoka Japan, where some of the best wasabi can be had. I can buy it in my supermarket. However, it is mush in just a few days in the fridge. This is one of the big reasons it is so expensive -- it doesn't travel. Those big stems they were harvesting were really lovely and would fetch about $15 each around here. But the big thing is that you might eat about 2 inches off the end of it, and be done. It just doesn't store. I've tried various ways of freezing it, and it doesn't work (it gets super bitter). You can often buy smaller stems for about $5 each and sometimes I buy them, if I'm doing sashimi, but the wasabi ends up costing me more than the fish! Well, that's another thing about living by the sea in Japan -- really cheap fish. So normally I eat it in the izakaya (sort of like a pub). I often just eat it by itself with beer. People think I'm mad, but it's *really* delicious!

I went to Japan a few years back and was able to go to a wasabi farm, and let me tell you there is certainly a difference when comparing the real vs the semi-fake one (in my opinion). What’s cool thought is that they even had wasabi ice cream there!

It was reasly educational for japanese. I haven't seriously thought about how difficult to grow Wasabi, as there were some Wasabi farms near my house in Japan (I live in UK atm). I recommend you to visit the biggest Wasabi farm (Daio Wasabi Farm) in Japan and try fresh one with Japanese Soba noodle which the place is also famous for.

I tried once in Japan, didnt know how expensive it was. The real one tastes absolutely different from the paste one, it is rather mild and the smell lingers a little bit longer. So basically you won't go for water after having it.

I never knew this, but I've always loved the fake wasabi and actually knew it was horseradish, I just didn't realize wasabi was actually a single ingredient in wasabi, I thought it was just the name for a sauce based on horseradish.

@@thomaspayne6866 The people who operate Truffle businesses in Europe often criticize their Chinese competitors to be selling pale imitations of the real thing. Truffles can grow in China but they say that foraging naturally grown ones from the alps result in healthier and better tasting Truffles than the Chinese farm grown variants. Despite all this, the Chinese continue to prove them wrong by selling truffles worldwide. Heck, certain companies in France itself prefer re-packaging Chinese truffles as opposed to selling local ones

We actually went to the wasabi plantation in Japan, so we tried fresh wasabi straight from the source! It does taste very different to what you get in the sachets, if anyone ever gets the chance to try real wasabi, definitely go for it! 👌

There's a specialty farm in Oregon that grows wasabi. Though it might've had problems with our recent heat waves and fires, the quality they produced a wasabi that was allegedly as good as you get in Japan.

They probably sell it all to high class japanese restaurants. I think it may be quite lucrative, once you actually manage to get the farm running. There are - at best - very few things harder to produce than wasabi.

Farms with running water are so beautiful. Rice paddies too. They're like scenes out of a fairy tale. I remember one where they actually have these small live fish that live in the shallow water and eat the tiny little invader bugs and their larvae before they damage the crop and apparently the fish droppings are rich in some obscure acid that is needed for the plant to thrive. Total natural ecology in this little farm. Wish I could remember what plant it was that were grown, does my description remind anybody of what it might be?

It's a certain type of grow setup. It's a complete mini-eco system. It's similar to hydroponic grows, but instead of liquid nutrients, the fish waste and such is where the get the nutrients. I've only ever had 1 friend that I know talk about this with me/know about this too. It's very underrated, however I do think you'd be more apt to find it being used in a Bud Grow-Op.

The plant and fish put together system is know as aquaponics. Many species of plants can be used in this system for mutual benefits with many types of fish. Not exactly sure what plant needing a certain acid might be, but the nitrogen and other natural fertilizers fish give off is very effective.

I just harvested my first wasabi plant and am going to have it with dinner. I grew it under a leaky spigot for 4 years, so every time I turn on the hose it gets a good soaking. I've never had it before, we're pretty excited about it.

In Japan, shark skin is used to grate wasabi. The flavor is much richer and smoother than the metal one, and the sweetness is also strong.

Before covid I ran a small market garden, the only land I had available was in a seasonal flood plane so I built up birms and swales to keep the veg out of the waters path. A massive storm blew in late spring of 2019 and at 2am I went out to my garden to see how the water made its way out of the earthen maze I’d built. There was something extremely pleasant about seeing running water through these well arranged garden bed paths. I guess it’s a fairly unique thing to see now a days, but clips from that wasabi farm remind me a lot of that storm. It taps in to something primitive and aesthetically soothing. Obviously, the wasabi set up was way cooler than mine, with concrete culverts and gravel planting beds. But still, it has a similar feel to it.

If you buy small amount, the real one can be affordable, especially in Japan or in US. For most people, the affordable one would be packs of small packets of ground wasabi. In US go to whole foods, they occasionally have them. Taste weaker than real one, but have similar complexity taste.

If you ever tried real wasabi, or prepared wasabi with real wasabi (Hon-Wasabi, 本わさび) in it, you will definitely know the difference. And you'll probably cannot go back to the horseradish paste anymore. Hon-wasabi is slightly sweet, and do not have the unpleasant feeling like the horseradish paste. It is a pleasant, mild, and enjoyable fragrance, that go well with no only Japanese food like sashimi, sushi, udon, etc., but also steak and meat dishes. If you like Japanese food, I strongly recommend you to try the prepared wasabi with certain percentage of Hon-wasabi in it. It is less expensive than 100% Hon-wasabi or the wasabi plant. Although being more expensive than regular horseradish wasabi paste, they are totally worth it.

I tried it once in a high end sushi restaurant, and I immediately noticed it tasted different (in a good way) that the wasabi I was used to eating whenever I ate sushi

Horseradish is not "unpleasant" in any way, it's delicious. Being easier to grow, hence cheaper, doesn't make it a lesser food.

I really wonder,who decided that this plant should be crush and tasted ,like how would they know they need to crash it and why would they even do it ,as it doesn't taste the same when it is eaten without being crash. It's like one person long long time ago be like: "hmmmmm, what's this? I shall grate it and taste it!"

What I'd really like to know is why does pure wasabi powder still retain its flavor if it's only supposed to come from the chemical reaction of the cell walls breaking down? Is it because this reaction doesn't happen when it's dehydrated and powdered, but then happens when water is reintroduced to the dried out cells?

@@Dparkes26 That's sorta what I figured as well (that the cell walls likely wouldn't be able to retain their structure). I have seen some powders claiming to be pure wasabi powder, so it makes me wonder if they're fake or if it just would have a very subtle flavor.

@@Dparkes26 Maybe moisture is a requirement as part of the reaction in tandem with the cell walls breaking down, so maybe not enough of the reaction happens in the dehydration process and when moisture is reintroduced then the reaction can start to take place?

The real wasabi tastes sweet, it’s more mild than horseradish but slightly stronger than mustard. I had it a few times when sightseeing in Hokkaido, Japan.
