Sigewinne can say all she wants, but the actual truth is that Hoyo wanted a playable melusine but they knew that since sigewinne was a melusine they would have to make a brand new set of animations for her such as walking or running(because obviously melusines move around differently from humans) and since they didn't want to do that they just made her into a human so she can reuse Klee's animations and just came up with some lore explanation as to why she looks like a human now.

It sounds like Siegwinne’s story is similar to the little mermaid in some elements Siegwinne the mermaid while her human friend was like the prince And siegwinne wanting to be a doctor was formed due to their friendship The witch giving her the concentrated sin that would turn her into human It’s just like how the people of Fountaine would gain their human form as well In the end she had to leave her friend.. Sure, you could say Hoyoverse didn't make a playable Melusine model and instead chose to be resourceful with what they already have is why Sigewinne has human features. Well be that as it may, the decision made sense in narrative knowing the discrimination faced by Melusines since they first went onto the surface of Fontaine. Sigewinne exchanging her identity as a Melusine to save her friend is a reference to Little Mermaid where Ursula made Ariel human in exchange for her voice. The potion part where Sigewinne changed into a human can also be a nod to what Shrek did in Shrek 2.
