version ko nito, kapag niluluto/palalambutin ko ang monggo may kasamang tanglad at taro(gabi, para mas creamy ang sabaw nya).and yong kamatis atleast 6 pcs na igigisa as in imamash talaga.and favorite kong gulay na isasahog nito ay ampalaya+kalabasa and dahon ng alukbate with chicken.

Ginisang Munggo or sauted mung beans, you can cook it just as it is or you could put any meat available. Some put the chicharon as it is, some just plain shrimp, some with baboy or fish meat, or smoke fish meat. Some sauted it in bagoong (shrimp paste) or fish sauce. Others just make it a sweetened mung beans.

fried tofu is one of the favorite sahog ..... just always remember... filipino cooking almost always starts with "gisa" then it will come to "sangkutsa.. always start with garlic, gisa till brown, onion next till caramelized, tomato and ginger next kung the recipe is asking for them.. then add meat, paminta at patis... low to medium fire till the meat is cooked, dont add any liquid, let the meat cook in its own juice, this is called sangkutsa. this removes the lansa or anggo (funky smell/taste of the meat) of the meat(patis is very important) and it binds the gisa flavor and the meat flavor.. secret of filipino tender flavorful dishes ... when the meats is cooked only then you can add your sauce, veggies or broth

Try putting smoked fish instead of pork or shrimps in your ginisang monggo. It has a different flavor profile that I like. Whenever we use smoked fish on the monggo, we would pair it with fried pork and if we use pork on the monggo, we serve it with fried fish.

Depends which region you are in the Philippines is the use of luya in munngo. Our family does not put. Ive tried other's with ginger and it seems different since were not used to that style. When we were still young, we'd wait for the boiling munggo to soften. Before it is cooked thoroughly, we'd take our bowls and take a scoop or two of the munggo porridge add milk and sugar....THIS IS SOOOO DELICIOUS!!!!

Just a Tip: when you're Planning to cook a Monggo ,a night before you can boil the mung beans for let say 3min then turn off the stove and let it stay the mung beans in hot water till the next day.it will softens the beans and easy to cook.On your Question if it needed to put Ginger? nope.. Normally Munggo does'nt have Ginger. Also if you don't have Baboy or Shrimp, you can use Smoked Fish. Me i always put smoked Fish in my Munggo recipe, it gives aroma ang different Taste.👌👍
