French onion soup is easy, white onion, leek, shallots, cut small and caramelise them in oil and butter. Make a soft roux, when the onions have colour add them to the roux. add beef stock add some cream sherry, salt and pepper. Bring to the boil and then turn the heat down to a simmer. If its not thick enough thicken with flour whisked in through a sieve. serve in a crock and cover the surface with crostini and a liberal amount of swiss cheese. Finish in an oven until the cheese has melted and au gratin.

@ I don’t really think you can go wrong, I see you used garlic 🧄 that’s also a type of 🧅 onion. Yours looked great. Really too much cheese for me these days though.
