Thanks - this was a great outing. Sometimes luck plays a big part. Getting out and practising does help though as well.

I just use auto. I take all photos in RAW, so on the very very few occasions the white balance is off I correct in the computer. With an EVF you also get a preview that will let you know if something is off. To summarise I don't give it much thought.

I don't use Auto ISO. I try to keep it as low as possible to get the necessary shutter speed. I place on filming a video testing the limits of ISO and noise reduction software.
