Where did you hear thistles may be carcinogenic? I've found nothing to substantiate that other than a line or two in an edible plant book with no reference. You know how you mention that thistle tastes like artichoke? Well, that is because an Artichoke IS a thistle, just one we happen to cultivate.

When I find one of these that's young I split it down the middle and put penut butter or sour cream in it and crunch away. I have never heard of or read about them being dangerous in any way. Of course too much of something that we are not used to eating can cause problems. Brocoli has carcinogenic chemicals in it too. It's hard to tell whetherthe science behind these kinds of findings is applicable to real world situations or not. Giving a rat the equivalent us eating 5 bls of some substance and saying it caused cancer, well go figure.

Not at all. With all plants be wise. Many that are edible should be eaten in limited quantities anyway.

Certainly something to look into. I just found a clinical study that found no toxicity in Milk thistle. Lettuce is also carcinogenic, the same with black pepper. Nettles will pull minerals out of your bones, but so will spinach, etc... I wonder how much of these warnings are only applicable if say all you ate was one type of plant for an extended period. In anycase, enjoyed the vid.
