Ramps, or wild leeks, are a delicacy of spring. In this video, I'll teach you how to dig them, preserve them, and make a delicious soup! From dehydrating the bulbs to pulverizing the leaves into a pesto, one thing is for sure- this is one of nature's most DELICIOUS wild edibles!

Every year Mount Rogers had a Ramp Festival. I never got to go. I'm so glad you took the time to show me how to identify & find them. I enjoyed learning how to clean the ramps, dehydrate the bulb & leaves. The soup looked delicious! Thank you for sharing.

Omg thank you! I went to my hidden and spot in the forest in Detroit that nobody knows about I found the ramps! I tried to pull them by hand and they broke off at the stem. I did not realize I have to dig them up as they are bulbs thank you so much going back tomorrow to harvest!

I have just a small patch to harvest from so i clean and chop the entire ramp in quarter inch pieces to dehydrate. I can not believe you ramp forest!!! Unreal. Lucky you!

Hy, we don't take the hole ramps, because there is not so much in my favorite spot. We cut the leaves and dried them (like dried herb), there are good for everything - salad, risoto, marinate the meat... We also make the pesto but we don't lake it so much. days ago I saw your chanel, wau I like it, you are amazing. I'm also for making with your hand, like gardening, have a farm or small amount of animals, like this you can have eggs from chicken, milk from goats and chesse , mushroom from forest nearby. It's a good thing I already ate dinner, that soup looks AMAZING! I can't eat onions, so leeks are my go-to veggie when onion is in a recipe. You gave lots of great advice (as usual)...thanks!!

Kathy, I feel for you, truly, for not being able to eat onions. I can eat them, any type of onion, but I can't eat eggs if they are cooked on top of the stove; I can only eat them in something cooked in the oven on a higher temperature, where the proteins and enzymes gel in a different way. There are times when I crave a fried, poached egg, or scrambled eggs... Good that you can at least eat leeks. :)

I was just planting wandering onions(Egyptian onions) given me yesterday.Wondering if they'll walk like Egyptians? Bet they do.They will be great! Wow ! I love these tricks from that cook... Dave is the lucky one here but I will certainly appreciate that smell and taste in my lifetime training with Brook meals creativity ... I think I will add my crunchy sourdough biscuits with this meal soup. Wouldn't it be AMAZING ? I am sure it will... another great instrutional video from our girl in the woods, Brookie. we have wild onions down here I know. we also have chicken of the woods mushrooms that you can cook up like chicken. ive never tried but i do fry up some mean chicken. My dog Poppy backs her rear up to my lap like Maysie does to you. I find it more endearing also. Maybe our doggos are just situating for a "running start" should they need to protect us. Naaawww, they want their butt scratching when they want it. We just gotta naturally love our fur babies. Poppy does not know shes a dog and i wont tell her. Looking forward to the next GITWz video and to 100,000. Gonna be a celebration but id follow you if you only had 100. Peace/Howdy Bushradical!!!!

Love the Vireo singing in the background! We have them nesting near here, too. I've really been enjoying Blue Spruce tip tea for the first time. They are so good! I know chefs that would pay you good money for those. Next time try cutting the ramp with the bottom part with roots still in the soil. It’s a good way to make sure you’ll keep them in good shape while still being able to eat most of it. Pull back just enough dirt to expose a little bit of the bulb so you can see where to put your knife and cut it so you leave the bottom with roots in the ground.Then re-cover the roots with dirt and leave them to grow next year. Not that I had to explain that last part to you. Good looking soup! Do you eat the green leafs or just the bulb? The leaf is also really good. Next time you have a bunch try sautéing them. Bulbs and leaves left intact, rinsed, and patted dry Sautéed in oil or bacon drippings with a little Coarse sea salt at the end. It’s really easy and really really tasty by itself or a side of some fish or whatever else you want.

I have never harvested ramps/wild leeks. It looks pretty easy and well worth the effort. I only ate leeks for the first time when I was about 72 years old. Now I buy them occasionally. Never too old to learn. Thanks for the lessons Brooke. :-)
