Milk Type - Sheep
Pasteurization - Raw
Rennet Type - Animal
Age - 6-8 Months
This cheese is basically a pecorino, aged for six months, and then once the cheesemaker has decided the cheese is good enough without any truffle, they send it up North - to truffle country! - and gets drilled and filled with rich black truffle paste. It’s luxurious and party-worthy, and somehow tastes even better than it looks.
Pairing Suggestions: You’ll have to pair this cheese with bold flavors! A big, bold red outta do it. Would be great with charcuterie, or honey. I’d tell you to melt it over a burger but honestly, you shouldn’t waste it. It’s too good! Because this cheese is from Italy, you should pair it with an Italian red and Italian meats! And from Sardinia is even better. Because remember, what grows together goes together!!
