Calories in calories out cooking spray still counts as calories it was probably still less calories than if they had of used butter though and it did look really good

Just made the pancakes and they were amazing! Anyone making the pancakes on their own, I'd suggest you make the custard mix first before making the meringue, just so it doesn't lose air sitting for a while :)

I did that on my first try. My mistake was over whipping the egg whites when making the meringue and overdoing it on the folding. I guess it doesn’t need to be lump free when you’re folding the meringue in because it’s too difficult to not deflate it when you try to homogenize the mixture. Mine also took forever to cook

Will, I Just wanna say, that you’ve really changed my view on food and inspired me to make healthier choices in the kitchen. I would go on and off keto the past few years, and while it worked, the restrictions were more stressful than they were worth. Instead, swapping out foods with lower calorie/higher volume alternatives has been great for my mental health. Keep up the great work man!
